Fair warning guys: I’m about to be the lady that talks about the weather again. But not because I have nothing else to say but because OH MY GOSH IT’S 70 DEGREES IN DECEMBER! I couldn’t be more excited either!
See, I love cooler weather – really I do. But 70 degrees is really my sweet spot, and even though it rained all day yesterday we spent the majority of Saturday outdoors and it was glorious. Well, minus the blister I rubbed on my palm from raking leaves.
Anyway – I would love a white Christmas about 5 years from now, mainly because I feel like I got my fair share of snow and cold when we lived in Colorado AND the past few winters here. Let’s just say if this warmer weather keeps up? Not mad about it!
So. I made this delicious caprese flatbread the other day and it was pretty fabulous. Did you know that a crazy addictive balsamic glaze is super easy to make? And it only requires 2 ingredients? True story – I thought that it took a lot of time to make one, but with this recipe you’ll see it comes together in minutes. It’s key to this amazing flatbread, and the sweetness of the glaze works so well with the pesto and creamy cheese and sweet tomatoes. Basically a dream!
