Recipes that are truly fantastic for dinner!

Good morning everyone! Want to know something? I totally had this post planned for yesterday, but then Nate and I binge-watched the newest season of House of Cards and, well, it didn’t happen. That show – I hate that I love it! But nonetheless, here I am today, right?

 

Truth be told I’ve been feeling really uninspired food-wise, which has led me to actually start using Pinterest for our meal planning lately. We’ve run into some duds, but more than anything a lot of great meals that I’m excited to share with you!

 

This winter rainbow salad from one of my favorite bloggers

 

A 7-ingredient zuppa toscana that makes a TON and is a great reheat meal.

 

One-hour dinner rolls that are just straight up perfect. So fluffy!

 

My sweet friend Amy’s chicken Parmesan casserole and slow-cooker white beans with Parmesan breadcrumbs. YES.

 

This shrimp and avocado salad with miso dressing. This one will be in heavy rotation this summer!

 

Chicken Parmesan meatballs from my girl Mary – amazing!

 

Slow-cooker chipotle pork carnitas. SO GOOD. SO MUCH FLAVOR.

 

Ranch chicken with potatoes and green beans. I love this one so much – highly recommend using chicken tenders!

 

A crustless zucchini quiche with minimal ingredients. I would recommend baking the zucchini slices first to get rid of the zucchini moisture rather than the salt method – just my personal preference. Bake ’em on a rack at 350 for 15-20 minutes.

 

This zucchini lasagna. Y’all, it is SO amazing. I can’t even tell you how many times I’ve made it!

 

Christina’s easy chicken pot pie. Yes please!

 

This one-pan roasted Fall vegetable and Italian sausage bake. All about the easy!
