I always talk about how one of my favorite things in blogging is simply the community that it brings. The way that it meshes together so many unique and amazing people with incredible and life-altering stories, and it turns this whole huge world into something just a little smaller.
A few years ago I met Katie at the BLEND Retreat in Boulder, just a few months after having had Weston, and immediately fell in love with her sweet heart and hilarious sense of humor. I had only been following her blog for a few weeks beforehand, so getting to meet her in person at the start of our “blendship” (blogger + friend = blend) was such a treat. A few weeks later she went through the incredibly tragic loss of her sweet momma, and I counted myself as lucky to be able to pray for her and her family in that time.
As far as food blogging goes Katie has some of the yummiest and most amazing recipes out there. I love that most of her recipes are filled with fresh ingredients, and the baked goods are JUST SO GOOD. I love that she shows her sweet babies in the kitchen with her, something that I’m working on doing more and more with my little guy. And I love that I have a sweet friend I can look up to online in so many facets of life.
So this smoothie. You guys know that I’m a big fan of pineapple and kale together, and this is no exception. Katie’s version is packed with yummy fruit, and I am completely in love with the pictures she took. I need milk bottles. STAT.
Y’all enjoy – you can find the recipe by clicking right here!
Nice. I’ve been making some green smoothies lately, but mostly using spinach. How does the taste of Kale compare?
Hey Sarah! Kale is a really bitter green, which is yummy – but tastes very grassy/earthy. Spinach is super mild and easily masked, but the kale requires a little stronger flavor.
Love Katie as well and her blog – need to try this smoothie! It is the season now!
Oh yum!! Now that it’s getting warmer I’m definitely in smoothie mode – and I’ve been looking for new recipes to make for Logan. Totally blending this one!
