What a Food Blogger Eats: Spicy Glazed Pork with Peppers and Pineapple by @barefeetkitchen #whatafoodbloggereatsWELL HELLO! I realize I posted yesterday, but totally didn’t Monday and Tuesday and feel like I’m so behind! When we got back from Branson we all came down with a cold – first W, then Nate, then A, now me. Now I’m pretty sure A has an ear infection so there’s that.

 

P.S. a word on ear infections: I never ever would have thought that I would pray for my babies to have ear infections but there’s something a little easier to rest with when you find out they have one. There’s medicine they can take, things you can do to fix it. Not like the ol’ “fever virus” that you have to let ride out, you know? Anyway, we’ll find out later this morning and hopefully get us all back on the road to health again soon.

 

I said it last week on Instagram and I meant it: I’m so glad that I got a copy of my friend Mary‘s amazing weeknight dinner cookbook in the mail because literally every meal this week is from there. An entire book of easy, delicious, family-friendly meals that are quick to make? Sign me up!

 

I was also one of the lucky ones to get to test some of the recipes before they hit the printers, so I know that these recipes are tried and true. This particular one for spicy glazed pork was perfect and quick, especially when I prepped everything during nap time and threw it together for dinner. Served on top of brown rice it was a hearty meal with the perfect amount of leftovers!

 

This isn’t an ad, I really do love Mary’s book and couldn’t recommend it more! And if you’d like to try out some great recipes before committing to buy, check out her site for some really fabulous dinner ideas!
