It may as well be said now: Nate and I are on a health kick.
It’s been something we’ve been slowly working up to, this whole eating healthier and smaller portions thing, and we decided that (albeit super cliche) January 2 was THE DAY that we were going to start waving our health flag.
Why January 2?
Easy. We had our dear friend Amy spending some time with us here and wanted to celebrate her last night here with pizza and beer. Done and done.
So January 2 we started and I’m happy to say that we’ve been total rock stars. I know the hardest part for me was stopping the “sweets” habit for after dinner. For some reason I just crave something sweet after a meal, even if I’m stuffed. And honestly these guys have been THEBESTTHINGEVAAAAAAAAAH to help curb that craving. 4 ingredients to a healthier dessert?
I’ll take it.
MAPLE PEANUT BUTTER DATE BALLS
- 1/4 cup creamy peanut butter
- 1/2 cup old fashioned rolled oats
- 13 pitted dates (I just bought the Sunkist ones in the dried fruit aisle, although medjool dates would probably be heaven)
- 1-2 tsp pure maple syrup
Add the oats to a food processor and process for about 20-30 seconds until they form a flour-like consistency. If you want your date balls to have more texture, just process the oats less. Add the dates and process another 20-30 seconds, then add the peanut butter and the maple syrup. Process until it all comes together in a crumbly delicious mixture. Roll into 1-inch balls and store in an airtight container in the fridge until ready to eat! I may or may not have also added some mini chocolate chips to one batch. Cause a girl will always need some chocolate 😉

Made these tonight for my sweet fix throughout the week, but don’t think they’ll be lasting that long!! Next time I’m making a double batch…these babies are gooooood!

Happy New year! Good to be back in the blog world. It was nice to take a little break!! But i was still reading your blog :).
It takes about 2-4 weeks and then you stop craving sweets. But you have to be off sugar totally or you will continue to crave. Also the trick is to eat high fat it really helps to keep the sugar craving. I drink whole milk, eat whipped cream with fruit etc. Just low carbs and NO SUGAR. And energy is spiking. I don’t even drink coffee. . These look fantastic!
