Have y’all ever heard of Scotch eggs? I’m going to be honest here and let you know that I was terrified to make these. I love all of the ingredients, but throwing them all together was kind of scary! I’m so glad I tried though, because these are so delicious. I recommend finding some round zucchini at your local farmer’s market, but if you can’t find them then you could totally use a zucchini half instead.
Just make it, enjoy, and get excited that the recipe is only 3 ingredients!
