Granola Crunch Muffins

I’m going to admit this here and now:  I’m a big cheater.

Yes, I said it.  I cheated on these muffins.  I used a store-bought muffin mix.  I used pre-made granola (LoveGrown in case you were wondering…the only packaged granola I will probably ever buy again).  I thought about making my own muffins and granola this morning, but then I also thought about sleeping til 5:30 instead of 4:30.  Sleep won.

 

Sleep will always win.

I actually saw this idea on an old episode of Barefoot Contessa the other day and thought it sounded genius.  And although she made her own muffin batter, she did use her favorite store-bought granola.  I figure if Ina Garten can get away with it – I mean the woman makes homemade breadcrumbs and chicken stock for EV.ER.Y.THING. – then I could too.  And you know what?  It worked.

 

I got my extra sleep, my extra snuggles, my now-daily slice of watermelon, AND my muffins.  And for a Monday morning I’d say that’s just right.

Since I didn’t exactly make a “recipe” out of this here are a few of my favorite muffins that adding a little extra granola crunch to would only make better:

  • Triple Chocolate Blueberry Muffins
  • Rum-Spiked Pina Colada Muffins
  • Orange Yogurt Muffins

Now if only there were a way for muffins to just make themselves, I think Monday mornings would only be significantly easier to stomach!

    I definitely support the extra hour of sleep. And seriously, the way I see it, these muffins went in the oven and didn’t come out of a plastic container pre-baked from the grocery. So they’re definitely close enough to homemade for me 🙂 Awesome start to Monday morning!

    I agree, no matter what Ina does we can all follow along. These muffins look wonderful. Love the crunch of that granola 🙂

    Who doesn’t love an extra hour of sleep even if that means sacrificing a little and using store-bought mix? Nothing wrong with that. These look yummy! 🙂

    I’m recent convert to the topped muffin. (Less crazy about the muffin top, if you know what I mean…) I will probably never bake muffins without a topping again. Love the granola idea. I’ll be trying that with my next batch.

    Awesome idea 🙂 Muffins are my go to quick breakfast. I freeze them up and pull one out at a time. Microwave for 45 secs and they taste fresh out the oven good. I’m going to have to check out that orange yogurt recipe. That sounds way delicious
