It’s almost 5!!!  Wahoo!  And guess what?  I saw a FOX on my walk today!?!  He was so cute, and I named him Skippy. 🙂  I’m weird, I know!

I’m telling you, this day drug onnnnnnnnnn…and onnnnnnnnnnnnn…and onnnnnnnnnn.  I kept glancing at the clock and it would only be 5 min later than the last time.  Although I’m thankful that things are slowing down a bit, but if the days would inch by a tad faster I wouldn’t mind 🙂

Lunch today was this soup:

And I had some big plans for these wraps:

But, as all health and food bloggers should understand, I had some chocolate first 🙂

Here’s my lunch all put together:  the soup mixed with about 1 cup of packed fresh spinach (bring on the fiber!), about a cup or so of baby carrots, and one of the wraps that I toasted up in the toaster oven with low-fat mozzarella and a little Italian salad dressing:

Overall it was a good and very filling lunch.  I gotta be honest though:  I was NOT a fan of the soup!  I ate all of the beans and chicken and spinach and left the tasteless broth…blech!  Nate let me have the very last of the pasta from the other night, so I ate that, about 1/2 a cup total, which was mostly radicchio and leeks.

As I said before, this afternoon went by very slowly, so I was REALLY excited when I got to go on my walk.  Bad news is my knee started hurting again, but I was so glad to get out that I didn’t care at all.  It was chilly, but not too bad, and I was able to walk full speed since the sidewalks were dry.  Viva la exercise!

Upon my return it was another 3-minute cookie with my last packet of Amazing Grass.  So warm, gooey, and delish!  Even the guys at work were wondering what smelled like fresh-baked cookies!

I’m pretty excited about dinner tonight…I’m making Italian turkey/artichoke/spinach paninis with Chelsea’s Roasted Tomato Soup and either spinach salad or mac ‘n’ cheese.  I can’t decide whether it’s going to be a healthful evening or if I’m going to have a little indulgence 😉

If you had to pick any sandwich in the world to say you love the best, what would it be?  If you can find it somewhere, where do you get it? I know mine is a muffaletta from Central Grocery in New Orleans…HOLY YUM!!!

    I like the tomato and mozarella sandwich from Panera….mmmm mmmm mmmm…It’s like a grilled cheese but with better bread, fancier cheese and some added sweetness from the tomatoes!!

    Hmm. Overall I’d say french dips are my favorite sandwich of all time.

    Although, a California club from Jason’s Deli is VERY tasty!

    I used to really love this sandwich from Bruegers Bagels and it has been so long since I have had it that I can’t even remember the name! But it was loaded with veggies, sweet red peppers and muenster cheese.

    There is a great little Italian place here that makes a fabulous panini with fresh moz. medalions, pesto, basil & roasted red peppers. It is Ah.mazing!!! Grilled to perfection and melty…yum.

    But, a good old peanut butter & jam (no jelly for me thanks) will always hit the spot too!

    Oh I hope you like the soup!!!! I too love muffulettas but there’s the deli in my hometown that makes the best roast beef, avocado, and cheese sandwich toasted. It’s to die for!
