OK. So, for the longest time, Nate and I have both been pretty avid tofu-haters, which may be raising some eyebrows since this recipe does actually contain tofu. I really like the idea of eating tofu in lieu of meat from time to time – I know that we could both use more plants in our diet, and I like that Wildwood products are certified organic, non-GMO and made from oh-so-good for us sprouted soybeans. And just to put it out there, the whole not liking tofu thing is not for lack of trying; we’ve tried several different preparations of every kind of tofu and none seemed to really stick out as something that we would both want to eat.   Until now.   See, after finding out that my regular store was all out of ricotta cheese and with a fabulous zucchini lasagna looming on the horizon, I decided to try something new. Something unexpected. And most DEFINITELY something that I wouldn’t tell Nate about until much later down the road. There was this one time that I blended soft tofu into a sauce and tossed it with pasta, and we both gobbled it up until I made the mistake of telling Nate that there was tofu in it when he was about 3/4 of the way done. Y’all, I’m not kidding, he didn’t even notice it until I mentioned it, but he stopped eating right then and there and said he could suddenly taste it in the sauce and it was making him gag.   Now we’ve had our discussions about this incident, and while I don’t really think he could taste it, I can’t very well vouch for my husband’s actual taste buds. But this time? This time the tofu was ALL UP IN this lasagna, I didn’t say a thing, and he gobbled it up and told me it was delicious.   Win? I think so. Except for now he’ll totally read this and I’ll be in trouble 😉 Oops!   Anyway, here’s the point: this is a really delicious way to use tofu instead of ricotta cheese and a fabulous way to use more of that amazing fresh summer produce we all love so much. A good food processor is all you need to make it all come together, and the flavor is outstanding! A delicious and creamy lasagna we can feel good about eating? YES!

SNEAKY VEGETARIAN ZUCCHINI AND SWEET CORN LASAGNA

  • 3 large zucchini, sliced very thin length-wise
  • 2 Tbsp salt + 1 tsp
  • 1-1/2 cup sweet corn kernels
  • 10 ounces Wildwood High Protein Super Firm Tofu
  • 1/3 cup shredded parmesan cheese
  • 2 whole eggs
  • 1 tsp black pepper
  • 2 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese

Lay the zucchini slices on a large baking sheet in a single layer. Sprinkle evenly with the 2 Tbsp of salt and let sit for about 20 minutes – this helps draw out the moisture. In a food processor combine the tofu (I just roughly chopped mine a bit), parmesan, eggs, remaining teaspoon of salt, pepper and garlic. Process together until smooth. Fold in the corn kernels. At this point preheat the oven to 400. Rinse off the zucchini and pat dry with a paper towel. To put the lasagna together layer 1/3 of the zucchini in the bottom of a 2-quart baking dish. Spread 1/3 of the tofu mixture on top, then layer another 1/3 of the zucchini on top of that, spread with another 1/3 of the tofu mixture, then the final 1/3 of the zucchini, the final 1/3 of the tofu mixture, and then sprinkle the 1/2 cup of mozzarella cheese on top. Cover loosely with foil and bake at 400 for 30 minutes, then remove the foil and broil the top until golden brown and bubbly. Allow to sit for about 5-10 minutes before serving. Serve hot!

    It’s hard to pick an ideal recipe, because there are many products. I like to use tofu and make a tofu eggless salad and serve it in a wrap with fresh tomato, and lettuce or arugula.

    Loved the Sneaky Vegetarian Zucchini & Sweet Corn Lasagna. Fantastic use of Tofu. I’d recommend Alton Brown’s “Mooless Chocolate Pie”, (Food Network), as a great Tofu dessert for a total 1 – 2 punch of excellent Tofu dining. Recipes like these have opened the door to many people who swear they hate Tofu. But that only lasts until they taste it in fantastic dishes like these. (And yes, it’s often better to not tell them until after). LOL!

    An ideal dinner would be a heavy-handed sauce Asian dish – I love making tofu filets of stir-fry. It is such a looked-over protein, but when you use it you realize how much flavor it holds! I love it with lots of veggies and cooked in veggie broth too.
