Besides the fact that this blogging community is made up of awesome and inspiring people, one of the things that I (obviously) love is the multitude of delicious recipes that I can find online at any given moment. Whether it’s actually specifically for my blog, or just a quick weeknight dinner, or both, I am in a constant state of looking for something delightful to cook. One of my favorite things is finding out that one of my favorite bloggers has had the opportunity to write a cookbook to further share their delicious food with the world.
I don’t know if y’all have ever read Picky Palate (who am I kidding – I’m sure you have!), but Jenny is one of my favorite people ever. She’s incredibly positive and encouraging, sweet and funny, and absolutely stunning to boot. Oh, and she makes killer food that really truly does please any pick palate. What’s not to love, right?
Needless to say I was so very very very honored to receive a copy of her cookbook a few weeks ago. As soon as it hit the doorstep I was pouring through it, planning our dinners for the next month. Nate took one look at the desserts section and adamantly decided that we would be having dessert for breakfast, lunch and dinner as well. Balance, right?
In all seriousness though, we have had probably 3 out of 5 weeknight dinners that are directly from the Picky Palate cookbook. So far our favorites have been the Salsa Verde Chicken Taco Bake, the Peanut-Ginger Noodles (my fave), and the Ricotta-Stuffed Spinach and Broccoli Pizza Pie (which I added Italian sausage to). So good, so easy, so quick.
So what I need in my life.
Since I cook so much for the blog I don’t really get a chance to utilize my cookbooks all that often. I only have a few that I really truly adore, but I can tell you that this is one new addition that I will probably wear the pages thin in. Jenny, thank you so much for the delicious cookbook!

I’m embarrassed to admit that I tend to go the easy route and will have a smoothie or a sunflower seed butter wrap on most nights… Would love to win Jenny’s cookbook for some new ideas!
I love new cookbooks!! A favorite go-to dinner at our house is black beans and rice with lots of veggies and salsa on top, or tacos. I always have those kind of fixin’s around the house.

Chicken pot pie or mac n cheese!
My go-to meal is stir fry! I cook whatever noodles I can find and throw in anything I have in the fridge- chicken, veggies, etc. So easy and so delish! 🙂
Baked chicken with pasta and tomato sauce. Simple but always so good!
Jen from peanutbutterrunner has a recipe for Mexican quinoa that’s my default. If I’ve planned, I’ll even have avocado around, which makes it even better.
Otherwise….sushi.
Chicken Taco Night is always a favorite in my house. I put the chicken in the crockpot…YUM!!!
We tend to do scrambled eggs for dinner when we are in a hurry or just out of ideas! A new cookbook would be fabulous! Thanks for offering this. Keeping my fingers crossed since I have never won anything on the internet before!
Well my housemates right now appear to be living on broccoli mac’n’cheese and pasta primavera…
My go-to-meal is tacos!!!
rotisserie chicken sliced on crusty french bread with avocado and a cup of hot tea!
Spaghetti with meat sauce! Not only comfort food, but the Classico sauce is fast and yummy, just add hamburger and spices.
Right now mine is soup.
The husband is so picky!! I would love to win the book to get some inspiration. My go-to dinner is pasta with black olives, mozzarella and tomato sauce. Simple, fresh and really fast!

I’m a big fan of making a soup on the weekend and have it ready and waiting for me in the fridge during the week. Heat it up, make a quick grilled cheese and we’re ready to go!
My families go to meal is spaghetti with clam sauce – with extra butter and petite tomatoes. We are Italian and it is so comforting!
I love Jenny and her blog, The Picky Palate! I am so excited about her cookbook? My favorite go-to weeknight meal this time of the year is my one pot chipotle turkey chili. It’s ready in thirty minutes or so, and leftovers are awesome on nachos or pasta! I serve it with all of the usual chili toppings…sliced scallions, cilantro, sour cream (or Greek yogurt), tortilla chips or corn bread, pickled jalepenos, etc.
You’ve sold me on the cookbook! My husband is Italian so pasta is our go-to weeknight dinner if we’re home late, have forgotten to take meat out of the freezer or just can’t be bothered. Spaghetti aglio e olio (olive oil, garlic, capers, anchovies, chilli) is my favourite combo and takes only minutes to whip up.
First time commenting! My favorite go-to quick dinner always starts with chopping an onion, then I toss it in my soup pot, add garlic, whatever spices I’m feelin’, carrots/celery/mushrooms/potatoes/whatever I have, then add lentils or quinoa (or both!), beans or chickpeas, broth, and bam! Delicious stew & one-pot meal done!
Our favorite go-to dinner here is homemade macaroni and cheese! Yummm. I have childhood memories attached to that dish. 🙂
My favorite go-to weeknight dinner as of late is fish tacos. We usually have the ingredients on hand, and they come together in under 20 minutes.

I eat lots of BIG salads! Many dif varieties, usually w/ grilled chix & lots of veggies.
Spaghetti!
Hamburger Salads! crumbled hamburger (either grilled or skilleted with some Montreal Steak seasoning), cheese, tomatoes, lettuce, and frozen french fries topped with a dressing made of relish, mustard, ketchup, and mayo! Delish!
Huevos Rancheros! I can make as few or as many as I want, depending on how hungry I am. I get great protein from eggs and beans to keep me full. And it’s the perfect dish to use up spare veggies so they don’t go to waste.
I love making tacos! They’re so yummy and they come together in just about fifteen minutes!

Go to dinner here is Panko crusted lemon-butter talapia with stir fry veggies! The broccoli pie looks delish!
My fav go-to weeknight dinner is everything-in-the fridge style soup or pasta sauce or frittata (depending on what sorts of things are in the fridge and which thing they are most likely to taste good in!)
Our go to is breakfast for dinner or fried rice!

I love cookbooks. I read them cover to cover just like a real book. My go-to dinner is actually breakfast items: quiche, hashbrown pizza or omelets. Love using cage-free eggs. Easy to sneak in veggies when my hubby isn’t a fan or them normally. 🙂

My quick go to dinner for busy nights is usually breakfast burritos. We are a house full of picky eaters, I am curious to see the recipes in the new book!
Love Jenny! My go to dinner is a Chipotle- style burrito bowls–a grain, a protein, lots of vegs, and healthy fat (usually in the form of guac!).

I love to do a quick pasta with lots of extra veggies! Especially with Little Miss this meal can always make it to the table.
My favorite (at the moment) is homemade pizza – quick rise yeast (or Pizza Yeast) for the crust, already prepped sauce, cheese, onion, green pepper and pepperoni (ready to eat in 40 minutes)
My favorite weeknight dinner is pasta with a spicy sausage marinara sauce. Serve with garlic cheese bread. It’s definitely on of my staples!
Our go to meal is steak fajita quesadillas that we make on a griddle.
I love Picky Palate, can’t wait to see the cookbook! My favorite weeknight dinner is polenta (made at home, not the store bought “log”) with frozen spinach and cottage cheese stirred in, topped with pasta sauce. Quick, easy comfort food!
I love to combine quinoa with pesto and lots of cheese. It’s so filling, delicious, and quick!

My favorite go-to weeknight dinner is vegetarian pumpkin chili. It makes a ton, and it seems to get even better after sitting in the fridge a few days.
A new cookbook would be amazing; I’m in a bit of a dinner rut. Coming up this week is; pear/pecan/gorgonzola chicken salad, quiche, and beef stew – all of which are staples in this house.
