When it comes to eating well around our house I like creating fun meals with fresh ingredients. Don’t worry, we love us some pizza (every Friday!) and chicken wings and cookies, but for the most part we really try to eat well.

That being said, I know I’m not the only one who has a hard time during the winter months getting great produce into our bodies. Sometimes a family just wants to chow down on comfort food, you know? I’ve found that since I’m a food blogger that a lot of the pull around the holidays is for making food specifically FOR those holidays, but then it just kind of ruins the actual day’s food since we already ate turkey and dressing and like in September or October. I guess if there’s one down side of my job that would be it – but not a terrible down side, right? 😉Creamy Fiesta Corn Fettuccine Alfredo - Lightened Up! || HeathersDish.com #pasta #healthypasta #lightenedupThat’s why a lot of times during the holidays we try to keep away from all “holiday” food until the actual Thanksgiving or Christmas day – it helps preserve the fun and beauty of it all for our little family. That doesn’t mean that we can’t enjoy really fabulous, delicious comfort food before and after though! And the great thing about this dish I’m going to share with you is that it’s such a great blank canvas to utilize those delicious holiday leftovers that we all know and love. Whether you’re a turkey or a ham family, or even vegetarian, there aren’t a lot of ingredients that you couldn’t mix in perfectly to this deliciously creamy plate of pasta.

The best part though? I have to admit I’m a sucker for the perfect little corn kernels running throughout the pasta. My use of canned vegetables in the past has been fairly limited, so I wasn’t sure what to expect, but once I saw the Del Monte® Fiesta® Corn I knew exactly how I would use it. Usually we get the French Style Green Beans for green bean casserole (HEAVEN), but stepping out with a new canned veggie was all I needed to be inspired. I love the idea of garden quality™ in your pantry because it really is true. Eating well doesn’t have to cost a fortune and we really can get good food out of our pantry too!

This pasta is creamy and comforting, perfect for those winter nights where all you want is to curl up on the couch with a big bowl of goodness and a movie. Y’all enjoy!

Creamy Fiesta Corn Fettuccine Alfredo - Lightened Up! || HeathersDish.com #pasta #healthypasta #lightenedupCREAMY FIESTA CORN FETTUCCINE ALFREDO

  • 1 pound dried fettuccine
  • 2 Tbsp cornstarch
  • 2-1/2 cups nonfat milk (or whatever milk you prefer)
  • 4 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp nutmeg
  • 1/4 cup grated parmesan cheese
  • 2 cans (15 oz each) Del Monte® Fiesta® Corn, drained

Bring a large pot of water to boil and cook the pasta til al dente, about 11-12 minutes. While the pasta is cooking, whisk the cold milk, cornstarch, minced garlic, salt, pepper and nutmeg. Bring to a simmer over medium heat, stirring constantly, until the mixture is very thick like a traditional Alfredo sauce. Remove from the heat and stir in the parmesan cheese and the corn. When the pasta is done, drain and toss with the sauce. Serve hot!

    Canned peaches are a favorite for me, for use in smoothies. And canned corn can’t be beat for fresh flavor and texture, either on its own or used in casseroles and other recipes.

    I always keep a box of Del monte canned peaches in my pantry. I buy the kinds in 100% fruit juice from Costco (I’m frugal) and store it in my tiny pantry (I’m in college) for when I’m in the mood for a sweet treat without all the added sugar. I just drain the can (I love the easy opening tops, my can opener broke so I can still have the peaches!), grab a fork and I’m all set. It’s so convenient, I love peaches, and I can have it all year long!!

    can I say that onions are my favorite veggie to stock? they’re cheap and versatile, and quick way to add flavor and bulk up a recipe. I’m also a mushroom addict!

      I’m so glad you’re here Lauren! The roasted color is from some roasted red peppers I threw in at the last minute (with a few of the skins still on) – the canned corn isn’t like that, but still just as yummy!

    Heather this is such a great and simple weekday dish… so warm and homey.

    My favorite pantry items are:
    1. tomato sauce- you can make SOOOO much with this. It can be a base for chili or marinera sauce or a roast or stew
    2. canned chunky pineapple- we eat a LOT of cottage cheese because it’s a good source of protein and it’s low on calories and instead leaving a big pineapple to go to waste in the fridge we buy canned
    3. salsa- quick and easy for whenever you have unexpected company

    Fiesta corn is one of my favorite flavor secret weapons! It’s my go to for chilis and dips, but never thought to try it in a pasta. Genius woman!
