Baked Eggs with Bacon and Spinach

Do y’all remember the scene in Runaway Bride (that’s an Oscar contender if I’ve ever seen one…) where Julia Roberts realizes that she doesn’t know how she likes her eggs?  You know, because she’s always turning herself into the girl that the guy she’s marrying wants to be with?

Yeah.  That’s not me.

 

I know how I like my eggs, although I will say that it depends on the day.  If it’s a scrambled kind of day then I want them scrambled with NO MILK, a tab of butter, and salt and pepper.  Maybe some goat cheese if I’m feeling feisty.  If it’s a fried egg day I love ’em over medium with salt and pepper.  Other ways are great, but if I’m picking favorites…well, no matter how Nate wants his I know what I like.

 

Hey, I’m an independent woman…throw your hands up at me.

Now that we’ve established my egg-eating habits, though, I have to say – baked eggs are kind of amazing, an unexpected new love in my egg-eating life.  Sure, you can blame it on the bacon, blame it on the butter, even blame it on the spinach…but whatever you do, you have promise me you’ll try these.  Just make sure you make ’em how you like ’em!

BAKED EGGS WITH BACON AND SPINACH

Serves 2, but this can be split in half easily to make them in small individual ramekins.

  • 4 whole eggs
  • 3-4 slices thick-cut bacon, cooked and chopped
  • 1/2 cup loosely packed spinach
  • 2 Tbsp cream
  • 2 Tbsp butter, melted
  • salt and pepper to taste
  • 1/4 tsp thyme

Preheat oven to 375.  Spray an oven-safe ramekin with nonstick spray.  Pour cream and butter into the bottom of the dish.  Layer the spinach and bacon on top.  Gently crack each egg onto a fourth of the spinach/bacon.  Sprinkle with salt, pepper, and thyme.  Bake at 375 for 15-20 minutes until the yolks are where you like them (I know a LOT of people like them runny, and by all means…go for it!  Just keep in mind it will need to bake longer if you want/need them to be hard).  Serve hot!

    Also a fan of baked eggs. Different delicious recipe. I preheat convection bake at 325, heat a little virgin coconut oil in ceramic bowl. Remove bowl, crack 2 organic eggs, add grape tomatoes, and bake for 10 minutes.
    Add 2 slices bread to oven. After 10 minutes remove ceramic bowl. Add fresh, raw veggies, including garlic and/or onion. Sprinkle turmeric. Depending on mood, fix toasted bread with virgin coconut oil schmear & cinnamon, plain or olive oil. May not consume all bread, so save for snack time.

    I made this dish for a brunch this morning, and this had an instant ‘wow factor’. I’d made a variation of these baked eggs once with just cream, torn green olives, and the croutons you described but as breadcrumbs. Anyway- thanks for sharing, and I’ll be back to visit another day.

    I adore eggs, and eat them most mornings, though have been eating egg beaters more often lately for cholesterol purposes. I usually make a 2 egg/egg white omelette with swiss/dill/maybe bacon and have half one am on a piece of toast with baby spinach; alternately I will do an omelette or a scramble with mozzarella and grape tomatoes. I love scrambled eggs but I do put milk in mine a lot of the time. Two fried eggs and toast is my other go-to.

    Have been wanting to try baked eggs (and test out my new ramekins!) and made it this morning. I didn’t have thyme so I used chives and I like my eggs firmer so I did the halved recipe for 20 mins then added a little 2% sharp cheddar for another 3mins or so. They are awesome! Next time I will use less butter as I drained a little off when putting on my plate. And now I know it makes almost too much for just me halved, with toast, so I may adjust again next time I make these!!

    Great…!, indeed, baked eggs (without oil) means….full of energy and nutrition but without cholesterol.

    Ah, I’d so love to make and have ’em right now but my oven’s not working atm! To heat on the microwave isn’t a safe idea either, ik. :/ But damn, looks delllliiicious!

    Yum! I’ve never tried baked eggs but these looked too good to resist! I halved the recipe (just for me!) and didn’t have any cream so I added a touch of cream cheese and a dash of 2% milk. I also put some cheddar over the eggs! WONDERFUL!!

    I made this this morning. Am eating mine right now, in fact. I’m a runny egg girl while my husband likes them scrambled and dry so that meant two separate bowls. I followed your directions exactly except two eggs per bowl. One of my yolks was at the edge of the bowl and was almost completely firm. The scrambled took longer to cook through, maybe stirring the whole thing together would work better. While I love cream and butter just as much as the next girl, I think you could half the amount, unless you’re looking for a splurge. My pepper is barely ground and added a nice zip to the dish, which got me thinking about adding some other forms of zip to the dish. Thank you for sharing this delicious recipe!

    crack 3-4 eggs into a smallish bowl; sprinkle lots of fresh cut clinantro over them; splash in some coffee creamer ;slop in some salsa and a splash of toasted sesame oil with a large sprinkling of toasted sesame seeds….microwave for 3 t0 4 minutes…. oh man get ready for a great feast….

    Now this looks familiar. Not that I’ve done this *exact* recipe before, but I’ve done one similar. I used 6 eggs instead of 4, with 2 of them beaten into the cream with a pinch of salt, pepper, and nutmeg. On the bottom of the dish, I placed stale, country bread (to soak up the egg custard I’d just made), then I topped it with kale, not spinach, and bits of crumbled cod. The unbeaten eggs went over top, just like here, and into the oven it went. It was quite a hit, and I’m told it tasted excellent (my guests helped themselves before I could get any). If I ever make it again, it may end up being my favourite.

    Currently, however, my favourite way of having an egg is a Greek omeletta, but that’s probably cheating since the point of one of those is to bind together and showcase the other stuff you put in it. My favourite “topping” for it is leftover feta and penne with zucchini.

    I love love love eggs – I could eat them at every meal if I didn’t have a fear of cholesterol overdose. I have never tried baked eggs but I most certainly want to after this!

    Fortunately my husband and I agree on this: just about everything is better with an egg! We both agree that eggs are the reason we couldn’t be vegan 😉 One of our favorite egg dishes is shakshouka, an Israeli dish consisting of a thick, spicy vegetable stew with eggs baked on top. I gotta say, baked eggs with spinach and bacon sounds fantastic too!

    Looks yummy will definitely try! My ultimate favorite is an seafood,asparagus and fontina cheese omelet! Never would I have dreamed of combining these ingredients but had it at a restaurant and was hooked!

    Baked eggs are so.good. I like the cream-greens-bacon route, but also a shashuka-style spicy tomato sauce. As for my favorite, fried over-medium all the way, followed by soft scrambled with lots of veggies and a little cheese.

    Baked eggs are the best “single lady dinner” ever. I eat them all the time when my husband works late. He’s not a huge fan so it feels like a treat. I’m kind of ashamed to say I’ve never baked them with bacon though. The horror!

    I love eggs just about any way except hard-boiled. I know, weird, right? If I have to pick one favorite way to eat them it would be scrambled, but I love them baked, too. This recipe looks so delicious, Heather! Sometimes I sprinkle the eggs with minced garlic and fresh herbs, too, and then grate some fresh parmesan on after it comes out of the oven…yum! Now I am hungry for baked eggs! 🙂

    I just tried baked eggs the other month (with mozzarella, tomato and basil) and really liked it! I’m usually a scrambled eggs or frittata kinda girl but baked eggs might be my new thing!
