Brown Butter Peaches & Triple Ginger Biscuits

This should be illegal.  Really.

 

I mean, I totally nullified the healthful benefits of peaches in one fell swoop and I don’t even care.  Don’t get me wrong, fresh peaches are probably one of my favorite things ever.  Give me a Fredericksburg peach and then don’t try to pry it from my greedy little fingers because I’ll never let it go.  I’ll let the juice drip down my face and get pulp everywhere and not even care.

 

But add a little brown butter and myOHmy you have something quite tasty on your hands.  Plus it’s perfect for eating frozen (thawed) peaches in the dead of winter when all you want FORTHELOVEOFALLTHATISGOOD is a stinking peach.  Y’all know what I’m talking about!

When we first moved in to our new house here in Little Rock we rolled up on a Friday afternoon only to be greeted by a big box ‘o’ biscuits from Robinhood Meetinghouse.  We rushed them inside, stuck them in the freezer (because they bake from frozen – win!) and have slowly been making our way through the boxes ever since.  While most of the time this consists of baking off a few biscuits and slathering them in butter and honey, I decided to take the Triple Ginger (OMG) biscuits and smother them in browned butter peaches for a fancy take on a shortcake.

 

Seriously.

 

WOW.

 

I have to say that all of the biscuit flavors are incredible, but for me the Triple Ginger took the cake…err…biscuit?  They have fresh, ground and candied ginger running through them, and they’re a perfect for both sweet and savory dishes.  I want to stockpile my freezer full of these bad boys and eat them every day for the rest of my life.  And the peaches?  They were a perfect compliment to the spiciness of the biscuits.  All in all I think I’ve found another addition to my last supper meal 😉

BROWNED BUTTER PEACHES

  • 4 ripe peaches (or about 2-3 cups sliced frozen peaches, thawed)
  • 4 Tbsp unsalted butter
  • 4 Tbsp brown sugar

If you’re using fresh peaches, remove the skin and slice them into 8 even wedges.  Set aside.  In a saucepan melt the butter over medium heat and, stirring constantly, let it simmer until it starts to brown.  Quickly add the sugar and peaches, reduce the heat to low, and cook for 2-3 minutes.  Remove from heat immediately and serve over biscuits, ice cream, pancakes/waffles, or whatever else your heart desires!
