What Makes a Perfect Morning

I am not the one who invented the chocolate-macadamia nut combination.  This much is true.

But there’s nothing wrong – not. a. thing. – with improving upon something that’s already fabulous!  Since we’ve been going through Maui withdrawals for the past week or so I decided to make one of my favorite treats to go with my coffee:  macadamia nut chocolates.

It’s simple really, but I made sure to add some Mexican sea salt to the mix to amp things up a bit.  That extra bit of saltiness elevates everything to a whole new level and makes these bad boys ultra crave-worthy.

Really, I’d suggest making small batches unless you plan on sharing or have self-control.  Which I do not.  Clearly.

You know what I say though?  Self-control is for the birds.  Highly overrated.  Lame-O.

Especially when coffee, chocolate, and macadamia nuts are involved.

Just tellin’ it like it is.

CHOCOLATE MACADAMIA NUT BITES

  • 1 cup chocolate chips
  • 1 cup dry-roasted macadamia nuts (NOT salted)
  • 1 tsp sea salt (you could use Kosher, but sea salt really is the way to go on this one!)

In a microwave safe bowl slowly melt the chocolate chips by heating for 30 seconds at a time at 20-30% power and stirring well in between.  You could also melt them over a double-boiler, but I’m lazy and the microwave method is faster with less clean-up.  Let the chocolate cool for about 3 minutes.  Scoop it out 2 tsp at a time onto a sheet of parchment paper.  Sprinkle very lightly with sea salt (that stuff is strong!).  Place a pinch of macadamia nuts on each one and press the nuts into the chocolate to make sure they’ll stick.  Wait about 10-15 minutes while the chocolate hardens, and then enjoy with a cup of coffee…or just by itself!

Ah yes, I can hear the waves crashing now!  Oh wait, that’s just the sound of the dump truck driving through the rain.  Nevermind 🙂

    Can’t go wrong with sweet + salty (and chocolate). I went to a graduation party and the kid had Hawaiin heritage… they served something very similar.
