Hello there!  How was Monday for ya? I know mine was probably one of the better Monday’s I’ve ever had 🙂  I made sure to start it off right with an almond milk, banana, cocoa, and peanut butter smoothie 🙂

Work chugged right along, and before I knew it, it was time for lunch!  I made something special yesterday…Jenna’s Lentil Dahl!  This was my first time making Indian food, and I think I am now in love.

Nate, however, is not in love with the smell in the house.

I think he will have to learn to love it 🙂

This was INCREDIBLE, but I will say that I totally forgot that we had ground coriander and used the whole coriander seed instead.  I didn’t love the tough crunchy bits from that, but in my next batch I’ll definitely use the ground version.  The flavor was great, but like I said, I didn’t love that texture.

Dinner was on the run from a Southern icon:

Y’all, I love Chick-fil-A.  Don’t judge me…what could be better than chicken brined in pickle juice and then fried to crispy, salty, juicy perfection?

Nothing could be better.

Nothing at all.

Except for kisses from Nate 🙂  I mean Growler…I mean Nate.  Nate is Growler:

No, really though…that’s his kickball name!  Well, and his homebrew name 🙂  So yes, dinner was on the run because I was going to watch Nate in his kickball double-header last night.

I thought it would be important to share with y’all what he had for dinner:  “A meal that is 40% carbs, 50% protein, and 10% ass-kicking juice.”  No, we’re not competitive at all!

This wasn’t a home-run kick, but it did let him take a base!

It was such a gorgeous night, and I was so glad to watch him do well in kickball.  Even though it’s not a certified “real” sport, I think it’s just fun to see Nate in a team atmosphere again!

My Wedding Vows

So I’m not sure why, but today I just felt really convicted to share my wedding vows with you guys.  Nate and I wrote our own, but also said the traditional ones.  We just felt that we had things to say that weren’t in the traditional vows, but there’s just something incredibly romantic about saying the same vows that millions have said from generation to generation!  So, without further ado:

“When I was in the 6th grade, my mom gave me a ring and I promised to wear it as long as I remained pure for my husband.  As time went on this ring began to mean so much more, and the word ‘purity’ began to mean my heart and my mind, as well as my physical body.  I promised the Lord that I would never stop wearing this ring until the day I united with my husband.  Today I will be giving you two rings:  one to promise you things and actions that a wife should do for her husband.  But this second ring I give to you as a symbol of everything that is yours:  my heart, my love, and my body.  I can’t believe I get to spend the rest of my life with my best friend.  I love you; I promise to give you my all and to never divorce you, all the days of my life.”

Nate, I love you so much, and those words have never been more true than every day that I’ve been blessed to spend with you in the past 5 years.  I love you more than ever and absolutely cannot wait to grow old together, fight together, make up together, raise children (and fur babies) together, and to explore this thing called life together.  You are my best friend, and I love you!

    Thank you so much for sharing! I agree with Tina, I would like to use the ring idea with my daughter. I, too, wish I would have been pure for my husband but…God is so good and we just celebrated 10 wonderfully happy years of marriage!

    Aww so sweet! And OMG you look BEAU-TEE-FUL 🙂 No judgment here on the Chick-Fil-A. I went to college in South Carolina, and ate more CFA in those four (and a half!) years than anyone needs to in a lifetime!

    so sweet! First of all, I love lentils…eat them 1-2 times/week. Yum! I also used to play on a co-ed kickball team and we have SO MUCH FUN. My fiance and I are writing our own vows and I love to hear when other people have done the same! 🙂

    First off, I am stealing what your mom did and giving a ring to M when she gets older! LOL That is so incredibly special. I really wish I had waited until marriage, but sadly a lot of misjudgments happened before. It really does make that bond so special. Good for you! I loved reading that.

    And Chick Fil A is awesome. I’m so bummed though that I hate it now while I’m pregnant. I don’t want a big hunk of chicken. Sad. 🙁

    Beautiful wedding photo!! How long have you guys been married?
    The vows are so heartfelt and inspiring.
    We wrote our own vows, also.
    Hubby and I saved ourselves for each other, also, and had our first kiss on the lips when the pastor said, ” You may now kiss the bride.” 🙂
    He had been married before and had a son, and I didn’t submit to the Lord until I was 22, so we didn’t completely save ourselves for each other. But, once we were saved, we kept ourselves pure for each other until united in marriage.
    Marriage is such an awesome covenant 🙂

    Oh kickball! I didn’t know those leagues existed until my friends in St. Louis joined one! Of course, theirs is less competitive and more “social”, but it looks like it’d be so much fun!

    Aw your vow was beautiful. It is so wonderful to see a married couple who is still so much in love. It seems to be a lost art to being married and still be in complete bliss. But I strongly believe that having God as the head of your marriage will help keep it that way. I’m blessed also to have married such an amazing man, and it only gets better. How wonderful it is to be in a great marriage! 🙂

    The banana cocoa looks delicious!

    I love going out to watch sports…any kind. I like to play too, but when it is your husband, it is just fun to pack a cooler full of drinks and goodies and sit back and relax…especially when the weather is warm.

    I love your vows Heather…spoken from the heart. I had a hard time picking “just the right words”, but Lars and I also wrote our own. I looked up a couple of vows and then tweaked them. Well, here they are:

    “Today, Lars, I join my life to yours in the eyes of God, not merely as your wife, but as your best friend, your lover, and your confidant. Let me be the shoulder you lean on, the rock on which you rest, the companion of your life. With you I will walk my path from this day forward with God as the head of our household. May God watch over you to keep you safe and help you to guide our family with love, faith and hope. I am blessed God has brought us together and know he will shower our marriage with blessings. I love you and give you my heart forever”.

For my @fasterwaytofatloss friends, here’s an AM For my @fasterwaytofatloss friends, here’s an AMAZING low-carb day dish: roasted cauliflower with smoked paprika and almonds! It’s so simple to make, incredibly flavorful, and pairs really well with truly any protein. Enjoy!

ROASTED CAULIFLOWER WITH SMOKED PAPRIKA AND ALMONDS
* 1 head cauliflower, cut into small florets
* 2 Tbsp olive oil
* 1 tsp salt
* 1 tsp smoked paprika
* 1/2 tsp garlic powder
* 1/2 tsp pepper
* 1/3 cup slivered raw almonds
1. Preheat oven to 375.
2. Spread the cauliflower florets onto a large baking sheet and drizzle with olive oil.
3. Sprinkle evenly with salt, pepper, paprika and garlic powder, then toss to evenly coat it all.
4. Roast at 375 for 25 minutes, tossing halfway through.
5. When there are 3 minutes left, open the oven and sprinkle the almonds on top.
6. Roast for another 3-4 minutes until the almonds are just lightly toasted, then remove and serve immediately.

I remember when I wasn’t sure it would sprout at all, and then one day the seed split and there it was! We also hit a point November-January where there was zero growth and I wondered again if it was a waste of time.

Now there are new leaves, new height, and (most importantly) stronger roots, all because of a little patience and care (it’s a metaphor y’all 😆). I find myself excited about the next season where it will be planted in dirt, which will offer new challenges - and growth- of its own. What a blessing to learn such deep lessons from a humble seed!

God, thank you for the little things that show us how much the little things matter. Amen.

Wanna know what DOES work though? This amazing new deodorant! The biggest question I get about cleaner products is always about which is the best natural deodorant. Friends, I’ve found some decent ones in the past, but this one takes the cake!

🙋🏼‍♀️ Hi, my name is Heather and I str 🙋🏼‍♀️ Hi, my name is Heather and I struggle getting enough protein into my diet. Who else can relate?!

One of my physical health goals this year is to gain lean muscle and get stronger, which means that I need to be getting enough protein in on a daily basis. For me a great source of lean protein is chicken breasts, but if they don’t taste great I’m not having it! So, if this is you, I have a solution for you: BRINE YOUR CHICKEN BREASTS! 

Here’s my fail-proof brine recipe for perfectly flavorful chicken breasts. Cook ‘em however you want - just make sure you brine them first! The difference is enormously worth it!

Recipe is for about 4-6 chicken breasts:
•3 tablespoons kosher salt
•3 tablespoons honey
•2 cups lukewarm water
•2 cups cold water

In a large saucepan bring the first 3 ingredients to a simmer. Remove and stir until the salt is dissolved, then pour in the cold water. IT MUST BE COLD - otherwise the brine will start to cook the chicken breasts! When the mixture is lukewarm, add the chicken breasts, making sure they’re covered in the brine. Cover and refrigerate for 1-6 hours (I recommend 6 if you can). When they’re finished, remove from the brine, rinse, pat dry and cook as desired!

I love running, walking and hiking, but weather, childcare, and a certain global pandemic make consistently getting out to do those kinda difficult. I’ve always enjoyed my #homegym, but quality cardio equipment is expensive! 

So what’s a girl to do?

This past fall I randomly decided to look at steppers, and found this @sunnyhealthfitness one on @walmart for $50! I just wanted something that I could use for 20-30 minutes 4-ish days a week, and it’s been an amazing fit. Would I like a Peloton? Duh, of course. But this has worked so well with the budget and space we have!

What’s your biggest struggle in curating a home gym?

I was weird about it first, felt like my problems weren’t big or messy enough to warrant professional help. And when I did start seeing my counselor I was awkward (this shouldn’t be a surprise). But here we are 4 months later and I’m seeing some incredible life-giving movement. God is so good, and I’m so thankful for friends who normalized counseling and therapy for me!
So. It’s been a while since I posted on the feed So. It’s been a while since I posted on the feed (or really in my stories too). Truthfully I’m still heavily processing the last 2 months, which were preceded by 10 other hard months. Life is brutal and beautiful and next-level hard and a joy, all swirled together. I won’t pretend that everything is OK; it’s not. I’m not.

This past weekend I had a moment of complete clarity and joy and the knowledge that I will be OK. And for that only-God moment I’m so thankful. For all of you who have been praying for our family, who have offered the sweetest words and condolences, who have truly been there, waiting and wading with me through the hard - thank you. God is still good. He is still on his throne. And I am so unwaveringly thankful for that!❤️

I have so many thoughts swirling around in my head these days, and half the time I don’t know which way is up. But I do know this: focusing on simplicity is the name of the game this year for me. It starts with the things I can control: my food intake, moving my body, my thoughts, my actions. The rest will stem from there!
