Who loves vanilla ice cream? (the crowd goes wild).

 

That’s what I thought.  And even those of you who don’t love vanilla ice cream would probably choose eating it over no ice cream at all right?  Hey, I’m just callin’ it like I see it.

But guess what?  This cake contains no ice cream whatsoever.  Zero.  Zilch.  Nada.

But boy howdy does it TASTE like vanilla ice cream!  And it would be perfect with vanilla ice cream on the side, on top, underneath, or just in it’s general vicinity.

 

It’s also good eating it straight out of the pan.  I mean, from what I hear anyway….

You have your basic white cake, which is the easiest thing in the world to make.  Then you have a vanilla-caramel-y glaze that you throw on top right after the cake is removed from the oven.  It bubbles and boils and you stare at it in hatred since you don’t want to burn your tongue and not be able to taste the cake.

 

Trust me guys, in the long run it’s worth it to step away from the cake and let it do its thing for a little bit.  Believe me, you want to taste this one!

I served mine with some chocolate chips since sadly we have no ice cream, but it’s all good since chocolate and vanilla are MFEO (right Janetha?) – side note, what movie is that from?  10 points if you get it!

If I’m being 100% honest here, I love vanilla ice cream, but have never really been one for vanilla cake.  This has changed my life in such a way that I will no longer profess to that lie anymore.  I LOVE vanilla cake…as long as it’s this one!

VANILLA ICE CREAM CAKE

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 3 1/4 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter or shortening
  • 1 cup milk
  • 4 egg whites
  • 1 Tbsp vanilla

Preheat your oven to 350.  Cream the butter and sugar, and then just add the rest of your ingredients.  Mix on the lowest speed until just combined, then up the speed 1-2 notches and mix for 3 minutes.  Pour into a greased 9×13 pan and bake at 350 for 30-40 minutes, or until a toothpick comes out clean.  Immediately pour on glaze, recipe below.

 

VANILLA ICE CREAM CAKE GLAZE

  • 3/4 cup butter
  • 1 cup sugar
  • 3 Tbsp + 1 tsp milk
  • 1.5 Tbsp vanilla
  • pinch of salt

Melt everything together over medium heat, stirring to keep the sugar from burning on the bottom.  Bring the mixture to a rapid boil and cook for 2 more minutes.  Pour immediately over the cake.  Let it sit and cool for at least an hour before digging in, although I would recommend letting it cool completely.

Like I said guys:  LIFE-CHANGING.  If you thought you just didn’t like vanilla, you should try this and think again.  Or just come over to my house in the next 5 minutes and have a piece, although I can’t guarantee it’ll still be here past 5 minutes from now.

    I’m not a huge ice cream fan (I know, I’m weird) but this looks great. I love cake and that glaze looks incredible. Plus, if I were to eat ice cream ever, it’d be with cake or pie. This would just save me the bother. Yum!

    Ice cream is like a food group to me… an ice cream cake, I need to try this!!! I AM partial to chocolate, but like you said, vanilla is better than nothing!
