Triple Chocolate Oreo Oatmeal Cookies

Let’s talk cookies, mmmmk?

I like cookies.  Duh.  We know this.

Nate loves cookies.  Again, duh.  I’ve harped on this a million times.

But methinks the cookies tables have started a’turning because I’m about to you rock your world with this.  Chocolate chip?  Yeah, they’re OK.  Peanut butter?  I mean, I’ll still eat them.  Sugar?  Yes, but…

These cookies are cookies with a little OOMPH! to ’em.  A little pep in their step, if you will.

These cookies take texture and flavor to a whole new level and they don’t care who knows it.

Crunchy?  Check.

Gooey?  Check.

Buttery?  Yep.

Deeply rich and chocolatey?  Uh-huh.

One of the best cookies ever?  You bet your bottom dollar!

TRIPLE CHOCOLATE OREO OATMEAL COOKIES

  • 2 sticks butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 cups old-fashioned oats
  • 1 cup chocolate chips
  • 1 heaping cup crushed Oreo cookies

Preheat oven to 350.  Cream together the butter and sugars until light and fluffy.  Add in the eggs, water, and vanilla and mix until well-combined.  Add in the flour, cocoa powder, baking powder, salt, and oatmeal.  Mix until just combined.  Fold in the chips and the Oreos.  Batter will be thick and lumpy and that’s exactly how it should be!  Drop by the tablespoonful onto a baking sheet lined with parchment or a Silpat.  Bake at 350 for 9-12 minutes until the middle is just set and the bottom has started to brown slightly.  Let cool for about 5 minutes before digging in.

Y’all, I can’t eat these right now and I have to say it’s killing me.  But come delivery day?  When I’m hanging out in my hospital bed with the little dude laying next to me and no more gestational diabetes?  Yeah, a big box of these will be on the other side.

Right next to my sushi and red wine 😉

I am LeeAnn’s mother-in-law, and I was reading her blog, with news of your baby shower. You name was highlighted so “I went there!” Your recipes sounded WONDERFUL and I copied several of them and can’t wait to try them! They aren’t French, but it almost felt like Julie and Julia (you probably know the book and/or the movie). Good Job! Keep it up!! And, happy delivery!!

Those look incredible. And they’re obviously healthy since they have oatmeal. Or at least that’s what I will be telling myself when I eat the whole batch.
