Told you guys I was thinking about making this whole toast obsession into a thing here! I’m so incredibly late to the game, but a great toast snack can be the difference between a good afternoon and a great afternoon for me. And with all of the ingredient possibilities around our house I just haven’t gone wrong yet.
So. Have y’all ever had just a moment when you were overwhelmed with gratefulness? I had that yesterday when I was hanging with some dear girlfriends. I’ve never had a group of girls that I trusted so much, bonded with so quickly, and felt like I was truly living life with as much as these gals. It feels like it took me 31 years to get to a point where these friendships could occur and thrive, and yesterday it just hit me and I was just so overwhelmed with thankfulness for them.
It hit me again later in the afternoon after I got to see Wes see his first train up close. Y’all, the joy in that boy’s eyes was so incredible; they were bigger, bluer, rounder than ever and I couldn’t help but giggle along with him. Seeing new things through his eyes, and again through the eyes of our second boy, is something I could never take for granted.
As I sit back and live the daily routine of mothering and cooking and blogging and repeating I hope I never forget to enjoy those moment of joy, of gratitude, of wonder. It’s too short y’all – this is all too short to take for granted.
So enjoy your spouse. Enjoy your kids. Enjoy your friends. And enjoy your toast 🙂
TOAST WITH RICOTTA, HONEY AND TOASTED PECANS
Serves 1
Ingredients:
- 1 slice of bread (I like Ezekiel 4:9 bread)
- 2 tablespoons ricotta cheese (I prefer full-fat)
- 2 tablespoons chopped toasted pecans
- 1 tablespoon honey
Directions:
- Toast the bread to your desired doneness.
- Spread evenly with ricotta cheese.
- Sprinkle evenly with chopped pecans; I like to gently press mine into the ricotta.
- Drizzle evenly with honey.
- Enjoy!
