As I’m typing this post I practically have a splint around my left index finger.

How to Make Blueberry BBQ SauceI don’t know why, but for weeks I’ve laid in bed at night thinking about food that I’m going to make for the blog and for dinners around our house, and when I get to the chopping veggies part I have this weird vision of cutting my finger really badly.  It’s almost subconsciously, and then all of a sudden my vision of beautifully chopped vegetables is clouded by, “OH CRAP I CUT MY FINGER!”  So so so very weird.

And then yesterday?  Yesterday I was chopping onions to make meatloaf and BAM! the finger cut happened.  I’ve always been fairly calm when there’s a physical “emergency” going on, so I just put the knife down, rinsed off the cut and put pressure on it to stop the bleeding.  The worst part about bad cuts isn’t always the actual event, though, it’s the fact that you have to live with it for X number of days after.  So here I am with a sore index finger, unable to type properly (my right pinky is going to be sore from all of the backspacing) and a huge fat band-aid that Weston keeps grabbing at because it’s new and different and he wants to stick it in his mouth.

The vision of cutting myself though?  Gone!  Strange, right?

Sweet & Smoky Blueberry Barbeque Sauce from @heathersdish HeathersDish.comEnough of that though – I doubt the reason you’re here today is to learn about my random first-aid woes.  It’s probably because you, like me, love a good barbeque sauce no matter what the time of year.  Or maybe even because you love any use for the fabulous little blueberry.  Or because you think the title sounds really odd and you want to know what the heck this Heather’s Dish character is talking about.

Heck, it could even be all 3 reasons, and I don’t blame you.  When I thought about this sauce I wasn’t totally sure I was in my right mind, but after making it and devouring it on top of every piece of chicken, fish, pork or beef I’ve had for the past 2 weeks?  Well, turns out I’m not as crazy as I thought I was 🙂

This sauce is thick, sweet, smoky, and it has a great texture from the blueberries.  If you’re wanting a super smooth sauce you can always strain the blueberry seeds/skins out with a cheesecloth, but I think the texture makes it even more appealing.  Regardless of the texture the flavor is addicting and is something you can enjoy year-round thanks to the availability of frozen blueberries!

SWEET & SMOKY BLUEBERRY BARBEQUE SAUCE

  • 12 ounces fresh or frozen blueberries, thawed
  • 1 whole ancho chile
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 chopped onion
  • 2 Tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/4 tsp ground chipotle
  • pinch of cayenne pepper
  • salt and pepper to taste

First things first, reconstitute the ancho chile by placing it in the bottom of a heat-proof bowl and covering it with boiling water.  Wrap the bowl in plastic wrap and let it sit for about 30 minutes to soften.  When it’s reconstituted remove the seeds and stem and chop roughly.  Add the blueberries, ancho, onion, garlic and a little bit of the ancho water to a food processor and process until smooth.  Add to a sauce pot along with the ketchup, brown sugar, vinegar, cumin, chipotle, cayenne, salt and pepper.  Add a little bit more of the ancho water to make the mixture fairly watery, then bring to a boil over medium-low heat.  Allow to simmer, uncovered, stirring constantly, for about 30-4 minutes until the sauce reaches your desired consistency.  I like mine thick and rich, so I let it go the full 45 minutes.  Serve hot, at room temperature, or cold with anything and everything you want!

    I LOVE blueberry BBQ sauce! I am carefully rationing the last few jars I canned earlier this summer.

    And if it makes you feel any better about your cut: I somehow managed to burn myself THREE times while cooking Thanksgiving dinner, including one very large burn on my forearm from when the pan of stuffing slid out of my hands as I took it out of the oven. Bandaids galore now.

    Oh, poor thing! I sliced into my thumb chopping apples for pancakes this morning, but mine was simply super-glued and Hello Kitty bandaged and I was good to go. Feel better, love!

    Lovely! I serve a blackberry sauce with roast duck, but never thought of trying blueberry with savory dishes. Love it!

Working on my #avoquados y’all! This protein smo Working on my #avoquados y’all! This protein smoothie has 40 grams of protein, lots of green goodness and tastes like a pineapple-vanilla dream!

- 1 cup water
- 1 cup frozen pineapple
- 1 cup frozen kale or spinach
- 1 scoop vanilla protein
- 1 serving collagen peptides (I use 2 scoops of @bulletproof brand; some brands just have one big scoop)
- 1 scoop greens powder (I used @amazinggrass)

Blend and enjoy!
🥗 FAST FOOD! Real real: I hate when people are 🥗 FAST FOOD!

Real real: I hate when people are all, “you can cook food in the same time it takes to grab takeout.” That is not always true, and sometimes it’s just about not wanting to try. Effort is hard, amen?!

Today I’m thankful to have had the energy and want-to to cook something a little healthier and save a little money. That’s not always the case, but today it was and I’ll count it as a win!

In the bowl: 3/4 cup black beans, 1/4 cup corn, 2 big handfuls of spinach, and two eggs. Seasoned it all with salt, pepper, garlic and smoked paprika!

Chocolate Peanut Butter Protein Oats! (AKA the thi Chocolate Peanut Butter Protein Oats! (AKA the thing I’ve been eating on repeat all week):

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup milk of choice
- 2 tablespoons brewed coffee (optional)*
- 2 tablespoons powdered peanut butter
- 1 tablespoon cocoa powder
- 1 tablespoon ground flax seeds
- 1 serving unflavored collagen peptides
- Sweetener of choice
- 1 tablespoon chocolate chips

Heat the oats, water, milk and coffee in a small saucepan over medium heat. Cook until thickened to your liking (although keep in kind the flax seeds and cooling will thicken it even further). Remove from the heat and stir in the remaining ingredients except the chocolate chips; I like to use a whisk to make sure the collagen doesn’t clump. Pour in a bowl, sprinkle with the chocolate chips and enjoy!

*I love to add a little coffee to mine to help enhance the chocolate flavor, but you do you!

Mentioned this yesterday in the ol’ stories, but Mentioned this yesterday in the ol’ stories, but thought it was worth sharing here too. When it comes to how I plan out meals, I look for 3 things:

🥗Whole foods. Not like the store (that’s called Whole Paycheck, right?), but meaning foods that haven’t been minimally processed. Fresh veggies, lean protein sources, whole grains, etc. I do have a few processed things on hand (protein bars) just in case I’m in a place where I need something SUPER quick, but that’s it. 

🥗High fiber. There are so many reasons we should be getting in plenty of fiber (Google is your friend here guys), but if I’m being honest I just feel better when I’m getting plenty of it. Leaner, more regular, more satiated. The list goes on! Besides the obvious fresh produce, I also eat plenty of legumes, whole grains (rolled oats, farro, quinoa - even though it’s a seed), flax and chia seeds.

🥗Hit my protein goals. Again, an essential nutrient. I have composition goals, and for my muscles to recover from my hard workouts I have to make sure I’m getting in enough protein. For me this means chicken, fish, and the occasional beef or pork.

It’s Friday, which means a myriad of things:
