Now that summer is starting to wind down a little bit I’m starting to get back into the swing of grilling again. It was just SO HOT before that standing in front of a grill, and I just couldn’t handle the heat…so I got back in the kitchen. But now? Yeah, now I’m rockin’ the grill again.
One of my favorite things these days is building HUGE salads for dinner, and offering salad bars of massive proportions when hosting parties. You get your lettuce, spinach, veggies, nuts, dried fruit and most importantly – the grilled protein. I submit that all meats are better on a grill – there are just so many layers of flavor! I also am kind of in love with this orange marinade too. Talk about flavor. It’ll rock your grilled chicken salad world!
SWEET ORANGE MARINATED GRILLED CHICKEN
- 1 12-oz can frozen orange juice concentrate, defrosted
- 1/4 cup water
- 2 Tbsp oil (I like olive oil)
- 1 tsp salt
- 1 tsp pepper
- 3 cloves garlic, minced
- 6 whole chicken breasts
So here’s all you do: whisk everything together except the chicken (obviously). Place the chicken breasts in a bag or pan; pour the marinade all over the chicken breasts. Marinate for 4-6 hours in the fridge. To grill remove the chicken breasts from the marinade and discard. Preheat your grill to about 400 degrees. Spray with nonstick spray, and place the chicken breasts on the hot grill. Grill for about 8-10 minutes per side until the internal temperature reaches 165. Let rest for 5-10 minutes, and then slice thinly. Enjoy!

I love grilling in the summer because it doesn’t heat up the house and light options like this salad are definitely best. Such a perfect marinade!

I love love love marinated meat grilled, sliced and served over a salad! All summer long. I can’t get frozen orange juice concentrate at all here in France (or I don’t think so) but the flavor of this marinade makes it more than worth my while fiddling around and trying to make it with fresh or bottled. Love it!
