Can I be real with you? Parenting has been hard lately. Both of my boys are filled with thoughts, feelings, and needs – and they pretty much always happen at exactly the same time. This results in a lot of yelling, fighting, and competing for attention. We’re working on it (that whole self control, regulating emotions, etc), but the fact is this: sometimes a mom just wants a dang cookie to help her cope.

I’ve been carb cycling for a few months now, which means that there are planned days of the week where I strictly eat a more low carb Keto-esque diet (for those of you who didn’t read my post on FASTer Way to Fat Loss just click here). It’s not an everyday thing, but it is part of my life and so you can imagine that on one of those I-need-a-dang-cookie days this week it was on low carb day. C’est la vie, right?

Thankfully the amazingly kind people over at Explorado Market reached out a while back and sent me some of the Sweet Keto Baking Mix and a bag of their yummy Keto Chocolate Chips. PROBLEM SOLVED Y’ALL.

Now here’s the deal: you can use the mix for anything you want, but I went straight for the recipe on the back of the bag because – as I’m sure you’ll recall – mama just needed a cookie and there was no time for creativity.

Out came the ingredients, into the oven went the dough, and out came delicious chocolate chip cookie bars that I was able to sit down and enjoy with my boys.

PRO PARENTING TIP: if their mouth is full of cookies it makes it harder for them to yell. That one’s for free, folks!

In all seriousness, though, I wasn’t planning on creating a long-form post about these products but I was pleasantly surprised and had to share! The mix was yummy, the final product was delicious, and even though my kiddos were in rare form, baking it together made them both feel so involved and loved…which is exactly what they were both needing in that moment.

And at the end of it all? It didn’t screw up my low carb day!
