Yesterday was a good day. It was filled with friends, laughter, music, hard work and Jesus – a winning combination if you ask me.
It’s not that good days are rare by any means, but one that just stands out as particularly fantastic is always appreciated, you know? One that starts with a smile from my husband, a smile from our son, 3 cups of coffee (not a result of being tired, but just because I love coffee). One that is filled with friends who love well and show me Jesus’ love and grace daily. One where I cleared out most of the remaining stuff in our garage and got in a great workout too. One that was spent outside with my little man and the sun shining down on both of us. One spent laughing and talking with encouraging and loving and helpful online friends. One where my husband came home early and we all got to be outside again. One where the mountain of laundry was demolished. And one that ends with a glass of wine.
These are good days you guys. I never want to waste them!
I feel like all good days should include really great food, and this garlic brown rice is no exception. Remember when I waxed poetic about rustic food and how I believe that it’s the staff of life? Rice is exactly that – rustic, flavorful, and wrought with texture that I simply can’t get enough of. Tonight I’ll be making risotto with white wine and salty gourmet cheese, but I must admit that nothing beats a perfectly cooked and fluffy brown rice.
Fancy food – well, I’ll be honest, I love it. But the rustic, simple, earthy stuff? It’s what I crave. That easy, life-giving, good day food – give me that any time!
Ingredients
- 1 cup brown rice
- 2 cups water
- 4 cloves garlic, grated or pasted
- 2 chicken or vegetable bouillon cubes
Instructions
- Combine all ingredients in a small pan fitted with a lid.
- Bring to a boil, then reduce heat to low and simmer for 45-55 minutes until the rice is cooked through and the liquid is gone.
- Remove from the heat and, keeping the lid on, let the rice sit for 5 minutes.
- Fluff with a fork and serve hot!

What a wonderful day! I love a good pot of brown rice because it’s so simple and versatile. I really like that you added garlic. I’ll have to try that next time.
