Good morning everyone!!!  How’s Tuesday treating you? Don’t forget to check out my giveaway for some amazing Wholesome Foods Bakery bars!!!

My little sister is driving up to Colorado right now with her boyfriend and I am SO EXCITED!  We’re all going to have so much fun, and I’m excited that I get to show them around where we live!  It’s going to be a blast 🙂  Plus, I get to have my first “Spring Break” since college!  Woot woot for that 🙂

Dinner last night was a little haphazard since I wasn’t sure what I wanted to make.  I decided on an easy lasagna option using cheese ravioli instead of the traditional noodles and cheese.  I made 2 since Nate’s eating meat and I’m not (til Easter that is!).  I had some sauce with shredded chicken in it that I used for his, and for mine I blanched some frozen veggies (cauliflower, broccoli, carrots, sugarsnap peas), and used spinach in both.  I also made them in bread pans for smaller portions!

For mine I started with a small layer of jarred tomato basil sauce to keep the noodles from sticking.  Layer frozen ravioli, blanched veggies, spinach, sprinkling of mozzarella, and sauce.  Repeat, then top with mozzarella and grated parmesan.  Cover with foil and bake at 400 for 20 minutes.  Remove the foil and bake for 5-10 more minutes until the cheese on top is melty and bubbly and browned.  Let it sit for 10 minutes, then cut/serve/enjoy!  I piled mine in a bowl – I had big dreams of it being a perfect fit and then ended up having to squish it all on top to fit.  Oops!  Still delicious though!

Last night we did everything we said we were going to stop doing and sat in front of the TV to watch Dreamgirls instead of cleaning and doing something productive.  It was really nice to sit back and just relax though!  Plus, we’re probably going to be super active when Salah and Chad get here, so it’s good we’re all rested now…right?  Right!

I woke up a little later than planned this morning, so I ended up doing a good core yoga workout with lots of planks and chaturangas.  I’ve always done a modified version of chaturanga on my knees, and this morning I decided to do it on my toes, the way you’re supposed to.  Guess what?  I COULD DO IT!!! I couldn’t believe it!  I was so excited because that alone is a huge increase in my strength 🙂  Breakfast this morning was the classic breakfast cookie:

But what’s that on top, you ask?  COCONUT BUTTER a la HEAB!

oh.my.gosh.  Can someone please tell me how I’ve made it this far without trying coconut butter?  This was SO good!  And I realized later that I forgot the Truvia in the cookie for some sweetness, but I didn’t even notice since coconut has a sweet flavor.  Guess I won’t need to add artificial sweetener to these anymore!  I also sipped on some iced coffee:

So I think tonight we might be hitting up Via Toscana’s happy hour again since I didn’t really get any food for Salah and Chad yet.  I just wasn’t sure what they both like, so I didn’t want to take a chance until they were actually here.  Plus, you just can’t beat a perfectly portioned meal for $5!  I’m so excited for a week of skiing and playing in the beautiful Colorado weather 🙂

Do you have brothers/sisters?  Do y’all have a good relationship?  If not (to either one of those questions) what’s your favorite thing to do with your best friend? Salah and I definitely have the same sense of humor, which can get out of control sometimes…I’m not sure if Chad really knows what he’s getting himself into 🙂  There will likely be a lot of laughing about things that don’t make sense to anyone but us…but that’s all part of the fun!

    I have a half brother who is 8 years younger and we have never lived together so we’re not really close, but maybe in the future 🙂

    Unfortunately my brother and I aren’t very close. I love him dearly but there’s 6 years between us (he’s older) and I think we just never got to the point of being close.

    My best friend is my husband for sure. We love to just hang out anywhere and be goofy together. We also share a similar sense of humor which gets us strange looks sometimes. lol

    I am totally craving raviolis now and just decided that I will be having them for dinner. 😉

    I have many siblings! Two little brothers, and two older sisters. Only one of them is from the same marriage as me, so the rest are half-siblings, but we all count each other as brothers and sisters! Siblings are the best!

    Of course, we hated each other growing up…I’m glad we grew out of that!!

    I have one brother and one sister. I am much closer to my sister since my bro lives across the country basically, but we do still get along. I love just laughing about random jokes with them!

    This is a very sad question for me. I am the oldest of four children, two brothers and one sister. One of my brothers died in a car accident about 5.5 years ago. We did not get along as kids and now I am left to wonder what our relationship would be like now.

    I have a decent relationship with my other brother and my sister is twelve years younger than me so I hope that we can one day have a “friend” type of relationship.

    My sisters and I didn’t always have the best relationship but it has grown to be a great one over the years. It is nice to know that they are always around when I need them.

    Oh I forgot to answer your Q about sis…
    My sis is 6 yrs younger and now that she is getting older we are getting along better. I moved out when she was in middle school to go to college.. then grad school then I got married and she was in college applying for dental school.. and the past two years she has been studying like a mad woman… but I think once things get easier on her school wise then we will be close.. I just don’t think she has time right now.. lol let me clarify.. she doesn’t have time to visit or hang out..

    Last year we started getting Bon Apetite out of the blue.. I called up to see if it was mistake and found out that my mother in law got us a year’s worth of subscription to Bon Apetite and Gourmet… but I guess she forgot to tell us… 🙂

    I had read your About me page before and knew you are in CO.. but I re-read it today and learned a lot more.. CO is our dream place to live… Isn’t Boulder the healthiest City in the US? We are hoping we can make a trip to Aspen for my 30th Birthday but it is still on the board and no plans have been made.

      Boulder’s definitely up there on the healthiest cities list…so is Denver! it’s a great place to live…i’ll be honest, i DO miss the south a lot sometimes, but i really enjoy Colorado! let me know if y’all come up to visit! i can show you all around now… 🙂

    I have 2 brothers and 1 sister. I’m really close with all of them but probably closest with my sister especially now that she has a wee one that is only 5 months younger than Lu.

    i just started reading so i don’t know if you mentioned this already but where in colorado do you live? i went to fort lewis college and spent a yeat skiing in steamboat-loved it!
    i have a great realtionship with my sis-you will have so much fun 🙂

    i have not been reading too long so where in colorado are you? I LOVE COLORADO! i went to fort lewis college in durango and spent a year skiing in steamboat spgs…..love it. i have a great relationship with my sis 😉

    DELISH ravioli!

    I have a younger sister and right now she’s at that stage (still a teen) where she “hates” her family and wants to always spend time with her friends and boyfriend instead (which is pretty typical) but besides that little phase we have a great relationship!

    We’re the sushi & shopping sisters, all the way!

    I have two younger brothers…I was about to say “little brothers” but they are definitely NOT little anymore! We don’t talk too often because I live in a different city, but when I am back home, we have a great time! They are awesome guys! And so grown up now! 🙂

    Enjoy your sister visiting! I’m not that close to my younger brother. It’s sad. We talk once in a while and I know I could go to him if I ever needed to talk. He was pretty mean to me when we were growing up– would always call me fat/ugly and was physically abusive (would throw things at me!) I know he was a kid then but I’m still holding onto that…

    You’re lucky you guys are close!

    Ravioli lasagna is a great idea. You combined the two best pastas!

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
