Sharp Cheddar Crackers

What is wrong with me?  I’ve hardly been posting sugary treats for a whole two days.

I think this is what’s called a quarter-life crisis.

I think.

So you know how yesterday I told you guys about that awesome bean dip?  And I said to eat it with anything you like?  Well, other than green beans I’ve been consuming mass quantities of the dip with crackers of the homemade variety.  Of the homemade and super cheesy variety.  Get ready to have your mind blown by simplicity!

SHARP CHEDDAR CRACKERS (based on this recipe from Ina Garten)

  • 1 stick of butter, softened
  • 4 oz sharp white cheddar, grated
  • 1 1/4 cups of flour (add 2 Tbsp if you’re at higher altitude)
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1/2 tsp black pepper

With a hand mixer beat the butter until light and fluffy, about 2 minutes.  Add the flour, salt, onion powder, black pepper, and mix til just combined.  Fold in the cheddar cheese.  Spread a sheet of plastic wrap on the counter and dump the mixture into the middle of it.  Form a log (about 1.5 inches in diameter) and wrap the plastic around it.  Refrigerate for 30-45 minutes.  Preheat the oven to 350.  Line a baking sheet with a Silpat or parchment paper.  When the log is very cold and hardened, pull it out.  Slice the crackers 1/4-inch thick and place on the baking sheet.  Bake at 350 for 20-25 minutes until golden brown.  Let cool completely before eating with dip.

Or don’t.

Whatever.

These are great, and I love the flavor that the sharp cheddar gives…tangy and salty and just right.

Just right for what, you ask?

Just right for breakfast, lunch, and dinner forever and ever AMEN.

    We made these with our kiddos the other week!! (Cooking classes) I swear the recipe was almost *exactly* the same – and omg, yes, sooo easy. They loved it 😉

    Only difference – we added paprika. Which I highly recommend!

    I’ve had crackers in the “things to bake” queue forever…and they’re still there! This makes me realize I need to get it into the “things I’ve baked lately..” column!

    I rarely buy crackers because I can eat a whole box in one sitting, so I will make them instead. And eat the whole batch in one sitting.

    Holy moly those look good. My best friend from college made rosemary crackers from scratch using a Martha Stewart recipe. They were so good we called her Martha for years after that;)

    I think we are one of a kind. I made cheesy crackers for the first time on Sunday… but they didn’t look nearly as good as these. Now I want to go home and make these!
