Hey y’all! Hope your Tuesdays are going really well! I know mine is (for the most part)…it’s been really great to read everyone’s comments on having a pen pal 🙂 I would totally recommend it to anyone!
Lunch today was different than usual! Started things off right with a bagel thin (everything flavor):
And a Hugh Jass salad with spinach, romaine, 1 large carrot, and the remainder of my cherry balsamic vinaigrette (check out the recipe page for the details!)
Followed with some snacking on my new favorite snack EVER: oven-roasted chickpeas!!!
They’re so easy! Take a can of chickpeas (mine was a 14 oz-er), drain, rinse, and pat dry with a paper towel. Coat in 1 Tbsp of olive oil and whatever spices you’d like (I used a Cajun seasoning on mine – the HOT kind!). Spread on a baking sheet and bake 30-40 minutes at 425, stirring every 10 minutes or so, until crispy. Make sure you watch at the end though so that they don’t burn! Let them cool completely, and you have an amazing sweet OR savory snack that’s got tons of fiber-y chickpea goodness 🙂 I might have also munched on a brownie finger and a coconut macaroon:
Mmmmmmmm, tasty. The rest of the afternoon was spent doing work (duh), and then going on a stroll with my camera. I tried to take it nice and slow so that I didn’t hurt my knee, and took pictures of the things I like to see along my normal walking/jogging route!

Whatever these are remind me of Texas bluebonnets. Y’all, there’s really not a whole lot that’s prettier than driving to Austin in the spring with the bluebonnets stretching for miles along the side of the highway!
I LOVE the texture of these in this photo. I DO NOT LOVE the texture of these when they get stuck in my clothes or in my dogs’ fur!
I took a TON of pictures, but these are just a sprinkling of the ones I liked best! I love the way the seasons are so defined in Colorado, and I can’t wait (or can I?) to show y’all photos from the fall. The leaves change just about every shade of every color, and it’s glorious!
Unfortunately my knee is still killing. I tried to make a doctor’s appointment today, and the lady on the phone was really confusing, so I just said I’d call back later 🙁 All I want is my knee to stop hurting…is that too much to ask for?! Luckily a great friend/co-worker of mine brought me this crazy contraption to use that’s better than icing the joint, so I can’t wait to try it out. It’s just hard to stop moving, and this literally gives me the worst pain, even during yoga. There’s no PAIN in YOGA!!! (said to the tune of “There’s no CRYING in BASEBALL!!! – great movie :)) Anyway, sorry to be a downer yet again. I’ve never really had an injury, so I’m working through the physical and mental pain all at once.
Alright, happy face ON! I’m really stoked about going to community group tonight. There’s not a lot that cheers me up like being around great friends and good food 🙂 Oh, and those French chocolates? They’ll be eaten tonight too…hopefully I won’t still have chocolate all over my face the next time I see y’all 🙂

I just made an incredible chocolate cake with the caramel/pecan/coconut frosting that you normally put on a german chocolate cake. I think it would be amazing on a brownie, too. I wrote the recipe down from a cookbook, but I’m happy to share if you wish!
