Little known fact (to the blogging community) about me: straight out of college I was in the management training program for Starbucks (SBUX is their NASDAQ name) in Dallas! I was doing that for a year and half before I figured out it just wasn’t for me. I liked the early morning shifts because I could get more done during the day, but as I progressed I just knew that it wasn’t something I wanted long term. I SO miss our regular customers and working the bar though. I could make a mean cappuccino in my day!
Dinner last night was kind of fun because I tried something that I’ve never had before: broccoli slaw! I bought it last weekend thinking I could figure something out, and then forgot about it until I was rummaging for something for dinner. I decided to roast it (just stay with me here) since I love roasted broccoli. Enter “Roasted Balsamic Broccoli Slaw”:
- 1 package raw broccoli slaw mix (can be found in the veggie section of just about any grocery store)
- 1 Tbsp olive oil
- 1 Tbsp GOOD balsamic vinegar
- 1 tsp (or less) garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
Toss everything in a bowl and mix until the slaw is all covered with the oil and vinegar. Roast at 375 for 15 minutes, stirring halfway through. DONE! I tossed mine with a little more balsamic vinegar because it’s amazing and then topped with about 1 Tbsp of paremsan cheese. Served with some toasted ciabatta and mozzarella and you’ll be in heaven! Seriously though, the only problem is I ate the whole batch and just kept wanting more!
Last night Nate did a shoot for the new DVD for WillPower and Grace, but the shoot was from 9pm to 2am. I fell asleep on the couch and woke up at 3am, and he still wasn’t home! Turns out they were running REALLY late and he got home at 5am this morning. Needless to say we’re both really tired, and since I didn’t want to wake him up I had the always delicious Spinach Feta Wrap from Starbucks for breakfast:

While I was there I realized there’s really nothing for me to eat for lunch, so I also picked up a Tomato & Mozzarella sandwich. I guess it’s just a Starbucks kind of day!
Thank you all SO MUCH for your amazing support of my idea (that you don’t know about yet!) I will say this: it’s an idea for a book that I know I would love to write, photograph, and would be incredibly passionate about. I think it’s about time to start on the book proposal! As soon as I have something solid down (or a book deal?!) I will definitley let y’all know. 🙂
On that note, what are y’all up to this weekend? Anything fun and exciting? We are just sleeping in, doing some much-needed spring cleaning, hopefully taking the dogs to swim, and brainstorming more about the book idea.

Coffee or energy drink? I’m going to go with coffee…I know that I like the flavor, but I just can’t bring myself to drink the huge energy drinks that are on the market. I don’t know if I’ll like them and I’d rather spend my money on a sure bet!

I would never think to roast broccoli slaw. But the concept makes sense. Every veggie is better roasted.

Definitely coffee. Energy drinks make me nervous. Too many people talk about the “ache” they feel when they start to come down from them… yeah, that’s your heart crying and telling you to stop. It’s no good.

Coffee for SURE. I had my share of SF Red Bull in college (when I visit friends now they will buy some for me… nice sentiment?! haha) but it’s so full of chemicals who knowwwwsss what it really does. I LOVE coffee. Mmm, some dark roast or a espresso.

Now that I drink it…COFFEE for sure. I have actually NEVER had an energy drink. Just reading the label makes me want to gag! The hardest “energy drink” I have ever had…Dr. Pepper 😉
