Savory Bacon & Green Onion Donuts with Goat Cheese Frosting

Soooooooo I told you guys I was going to get carried away with the donuts thing, right?  I promise it’s a week-long thing but it will blow over soon.

Well, maybe.  Or not at all.  I haven’t decided yet…

Let’s be honest with ourselves here though:  these donuts are really just a fabulous basic cornbread recipe filled to the brim with bacon and green onions and then topped with this ridiculously easy AND tasty goat cheese “frosting” and more bacon crumbles.  It’s not like I found the answer to world peace or something.

Well, maybe world DOMINATION.  Muahahahaha!

Or, you know, maybe I’m just getting carried away.

The idea came to me the other day during a Cupcake Wars marathon – one where Nate was wondering around the house wondering whywhywhy was he being subjected to this misery?!  And whywhywhy was I putting our son’s future football/tennis/golf career in jeopardy by forcing him to watch a baking “reality” show in which approximately 87% of the contestants wear pink frilly tutus?!

You know, I don’t have an answer.  To either question.  Because all I could think about during this was the fact that I was going to make savory donuts and knock the world off its feet in the process.  These donuts are awesome, they take such little time and they’re great with a big bowl of chili, topped with an egg, dipped in melted butter OHMYGOSH, or just shoveled into your mouth with reckless abandonment.  Promise I won’t tell if that last one’s you – because it’s most definitely me!

SAVORY BACON & GREEN ONION DONUTS WITH GOAT CHEESE FROSTING

Makes 6 donuts

For the donuts:

  • 2/3 cup all purpose flour
  • 1/3 cup cornmeal
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 whole eggs
  • 2 Tbsp vegetable oil
  • 2 tsp sugar
  • 3 Tbsp bacon bits, plus 2 more for sprinkling (you could totally cook your own bacon and crumble it, but I was going for ease here)
  • 3 Tbsp sliced green onions

Preheat oven to 350.  In a bowl whisk together the milk, eggs, oil and sugar.  Gently fold in the flour, cornmeal, baking powder and salt until just combined.  Fold in the bacon bits and green onions until just combined.  Spray a donut pan with nonstick spray and evenly distribute the batter among the molds.  Bake at 350 for 8-10 minutes until JUST set.  Let cool completely before frosting.

For the goat cheese frosting:

  • 6 oz goat cheese
  • 2 Tbsp milk
  • 1/2 tsp chili powder OR black pepper

Let the goat cheese come to room temperature while the donuts are baking.  Whisk in the milk one teaspoon at a time until it becomes smooth and the consistency of spreadable frosting.  Add in the chili powder or pepper and stir to combine.  When the donuts are cooled spread evenly on the top of each donut!

Savory donuts?  Check.  Ridiculous use of bacon?  Check  World domination?  Check.

That recipe sounds sooo good! I am a total sucker for goat cheese. And just yesterday my boss recommended a portugese goat cheese spread (you can only get it in a Portugese shop here) … that would be PERFECT on these doughnuts! 🙂 Now I only need to get a doughnut pan … doughnuts definetely are NOT common in Germany. But the shape is just so pretty!

My husband has the same “why-why-why” reaction to Cupcake Wars…but I love it even more knowing it inspired something as great as this!

I say keep the donuts coming since both sound exactly like something I would love. PS – I miss you. I still think of how great it was to finally get to hang out a bit in person a couple months ago.
