I said something out loud the other day.
Something that has been a teeny tiny dream of mine for a while now. Something that I’m completely terrified to even let myself think of. Something that would require a LOT of work from God because I know He knows that I’m completely incapable.
After I said it I realized just how true that last sentence is; that these huge dreams and crazy ideas are just that – HUGE and CRAZY. It’s amazing how much I’ve come alive since realizing the things that I am terrified to do, but I believe that it’s because God is really only able to work when I reach the point where I can’t help but stop relying on myself.
I know I’ve mentioned before that I really hate when people blog about things and then never tell you what they are, but since this is a new revelation to me in and of itself I can’t help but hold it in a little bit longer. The other day it just kind of got blurted out among some amazing friends, and before I even knew what happened it was out there.
So anyway. After that I definitely had an “I NEED CHOCOLATE!!!” moment, with only a few chocolate chips in the house to fulfill that need. I scoured the pantry in search of a way to streeeeeeetch that chocolate a little further and emerged victorious with some dried apricots and macadamia nuts. Heaven help me, this is one combo that I was unsure about but ended up SUPER happy with!
When Nate and I were on our honeymoon in Maui we had chocolate-covered macadamia nuts daily – nay, hourly – and I’ve never truly realized the craving for them ever since until now. Crispy, chocolatey, crunchy…amazing. And the flavor of these definitely hits that nail on the head! So when I’m scared and praying and going crazy over big dreams I now know that I can turn to these bites in a snap!
SALTED CHOCOLATE APRICOT MACADAMIA BITES
Makes around 14 bites
- 1 cup lightly toasted unsalted macadamia nuts
- 10 dried apricots
- 3/4 cup chocolate chips
- 1 teaspoon coconut oil
- salt of choice (I just used kosher salt, but fleur de sel is always amazing)
In a food processor pulse the macadamia nuts until finely chopped. Add the apricots and process until the mixture begins to come together. Scoop about a 1/2 tablespoonful per bite and gently roll into a ball. Place on a plate and refrigerate for about 20-30 minutes. When the bites have hardened slightly, melt the chocolate and coconut oil together in a microwave-safe bowl and stir until smooth. Dip the bites into the chocolate, letting the excess run off, and then place back on the plate. Sprinkle lightly with salt and then refrigerate until ready to serve!

I love those Hawaiian chocolate-covered macadamia nuts! These look fantastic. I have a big bag of dried apricots and didn’t know what to do with them… until now!
