Guys, this weekend was FANTASTIC.  We finally got 3 days in a row of good sleep, slept in on Saturday, went to eat PIE (post on this coming soon!) in a small town Arkansas, watched movies, hit golf balls, and generally just loved one another well the whole time.  Sprinkle on some fist-fulls of baby giggles, and we had a weekend that really could not have been any better.

 

I have to admit, I still get shocked at how good sleep really does effect the way the days go.  What’s funny to me is to look back at when Weston was first born and remember how little sleep I actually got – I was so tired at that time that I think I was just in survival mode.  Kind of like when you write a term paper with zero sleep and then re-read it after you get the grade back and think to yourself, “Wow. I sound so much smarter on no sleep.”

 

No?  Just me? 😉

Anyway, the sleep really helped this weekend and I have to say that I am feeling so much better than I did this time last week.  YAY.

 

Oh, and this dish?  It was a mishmash of ingredients that we had leftover from the grocery run last week.  I just went with it, and while I can’t say it’s much to look at (I think you’ll agree), it’s truly delicious and one of the simplest dinners I’ve made in a while!  We served ours over rice because that’s what we had on hand, but I’m thinking penne or bowtie pasta would be fabulous!

ROASTED CAULIFLOWER AND ITALIAN SAUSAGE

  • 1 head cauliflower
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 pound Italian sausage links
  • 1 cup prepared marinara sauce
  • 1/4 cup water

Preheat oven to 450. Place the sausage in a large pot and cover with water, about 1 inch. Bring the water/sausages to a boil and let them cook for 10 minutes. Meanwhile, cut the cauliflower into florets, place in a 9×13 pan, and toss with the olive oil, salt and pepper.  Pour the marinara and water over the cauliflower.  When the sausage is done boiling, nestle the links into the cauliflower, place the whole dish in the oven and roast for 25 minutes at 450, turning the sausage halfway through.  Serve hot!

    I had to laugh when I read your post about being sleep deprived. I know exactly how you feel! We just got a new puppy and she has been keeping me up every night for the past week! Good thing she’s cute 🙂 I’m in zombie mode this morning. Can’t wait to try this cauliflower/sausage recipe, it looks delicious!

      When we first got Bunker (he’s our 6-year-old lab) everyone said that puppies were good training for having babies – and I have to agree! It’s hard work training and loving them so much!

    Seriously, in my mind these are the best dinners. Using what you have on hand really forces me to be creative (although I often fail miserably at it 🙂 )and is less wasteful. I adore cauliflower and would love to give this a go. Glad you were able to catch up on your rest!

      I think it’s so fun to try to be resourceful with what I have on hand – I’m always a little worried about what my hubby will think though 😉

    My children are 10 and 13, they begin to sleep a lot in the morning… And for me, this is too LATE, I’m used to be woke up at 7 !! … I’m hesitating to go crying in their bedroom or just saying :”… I’m hungryyyyyy ! Wake up, I want to eat breakfast !”… Revenge ! 🙂
