Reindeer Bites

I don’t know about you, but sometimes I just need something sweet.  You know, when it’s Friday evening and you’ve busted it all week and are emotionally and physically drained and all you want is, oh I don’t know, a blizzard from Dairy Queen?  Not that I know from experience, I’m just asking if maybe that’s happened to someone else out there.

 

OK FINE.  I know from experience.

 

Anyway, I might have had that same need on Friday night.  Just like Nate had a need to watch all 10 episodes of The Pacific this weekend.  Mars and Venus, guys.  Mars and Venus. I waltzed into Dairy Queen and behold:  Reindeer Bites Blizzard.  Ice cream with caramel, chocolate pieces, toasted coconut, and cookie pieces.  ‘Twas as if the cares of the world completely disappeared….

Fast forward to present: with the absolution of work in my future last night, I needed to recreate that experience STAT.  Without spending an obscene amount of money at Dairy Queen.  Enter Reindeer Bites Part Deux!

 

REINDEER BITES

  • 1 box Nilla Wafers
  • 8 oz chocolate, melted (I melted mine in the microwave, 30 seconds at a time at 20% power and stirring in between til smooth)
  • 1/4 cup toasted coconut (toast the coconut in a pan over medium-low heat until golden brown…make sure you keep stirring!!!)

Once the chocolate is melted and the coconut is toasted, dip the Nilla wafers in chocolate and then dunk in the coconut.  Set on a piece of wax paper (or foil or parchment…whatever) til they harden.  This is a great meal little snack to have if you’re craving chocolate, vanilla, sugar, or just plain goodness.  Or really anytime.

All I know is I’m just glad that I don’t have to wait for the next trip to Dairy Queen for other-worldliness.  I have about 8 lbs of it in my kitchen right now…

    I’ve heard of reindeer feed but never reindeer bites. So cute and festive! Oh and not to mention the perfect flavor combos. 🙂

      i hadn’t either til the blizzard the other night, but i’m glad i have now! i think it’s a fun holiday treat that combines less traditional holiday flavors 🙂
