Perfect Breakfast Biscuits

Let’s talk about bread for a second.

Bread is the one thing I’m always in the mood for.

If the bread is bad at a restaurant, I probably won’t be back.

I could make a meal of bread and butter and a glass of water.

Bread rocks my socks.

So you can imagine that quick bread in the morning is going to be pretty high on my list of loves, right?

Yesterday morning I woke up with the biggest craving for homemade biscuits I have ever had.  Who knows where these things come from, sometimes they just appear!  But regardless, there I was in the middle of the house wanting a bread item.

 

Shocker.

 

Thank goodness for these biscuits…I don’t know what I would have done without ’em!

 

PERFECT BREAKFAST BISCUITS

(inspired by America’s Test Kitchen)

  • 2 cups flour
  • 1 Tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup 1/2 and 1/2
  • 1/2 cup butter, melted and cooled slightly

In a large bowl mix together the dry ingredients.  Add the wet and stir until just combined.  Dump the mixture out onto a lightly floured surface and knead for about 20-30 seconds.  Pat into a 1/2-3/4 inch thickness and cut (you can use a circle cookie cutter or just use a knife) into 2-inch pieces.  Place on a cookie sheet lined with parchment (or a Silpat) and bake at 350 for 15 minutes.  Serve hot with butter (duh) and honey, or make your favorite breakfast sandwich out of them.

Oh, and not that I know from experience (or do I?), try not to eat the majority of the batch in one sitting.  You know, you don’t want a tummy-ache or anything… 🙂

    Maybe I will need to try biscuits! I have made bread THREE times and it keeps falling! What am I doing wrong with this altitude? I’ve changed yeast….

    I’m glad that I’m not the only one who thinks bread and butter can serve as a meal as long as you have enough of it! Anything else that you put on it is just the frosting on the cake.

    I LOVE biscuits. So random, but the biscuits in my high school cafeteria were so good I’d eat them for breakfast every morning. Also, I’m with you on restaurant bread…SO disappointed when it’s not good and pretty much in heaven with a good bread basket.

    yup-good ole baking powder biscuits. i sure do miss these 🙁
    can’t really do these with gluten free flour.
    when i was first married i made some of these on a whim, and hubby thought i went to Popeye’s and bought them.
    ha! like i would drive 30 minutes to Popeye’s to buy biscuits!
