I love peaches. This time of year is just a dream for me when it comes to great fruit options, and peaches are always at the top of the list! I kid you not, I’ve had probably 2 a day (if not more) for a few weeks now and I’m SO not slowing down until the fall apples hit the shelves.
These muffins are seriously great because not only do they have that silly-good peach slice baked right on top (holy extra peachy-ness!) but they have lots of raw millet in there too for extra crunch. A muffin with some gumption, if you will.
All breakfast pastries should have some gumption if you ask me.
