Autumn is on Faces of Beauty today!
It must be orange season. Hence the 50 million oranges I have inside of my house whilst there’s 5 feet of snow on the ground.
OK, maybe it’s 5 oranges and 5 inches of snow on the ground. I’ve been sick…you can’t really expect too much from me in the truth department! Except when I tell you these muffins are heavenly and you should make them ASAP. Then you should run to your kitchen and start on them the minute you’re done reading.
I don’t love muffins, but there have been several mornings lately where a freshly baked muffin just hits the spot. And this is precisely one of those mornings.
- 1 1/2 cups flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 3/4 cup plain yogurt
- 1 egg
- 4 Tbsp canola oil
- 1 tsp vanilla
- juice and zest from 1 orange
Preheat oven to 350. Spray a muffin tin with nonstick spray. In a bowl whisk together the yogurt, egg, oil, vanilla, orange juice, orange zest, and sugar. Fold in the flour, baking powder, and salt. Fill each muffin cup 2/3 full and bake at 350 for 20-25 minutes. If you’d like to make a glaze, I made mine with 1 cup of powdered sugar and the juice of one orange.
The next step? What are you waiting for?! Eat immediately!
