Old-Fashioned Peach Cobbler

Today is my Papa’s funeral…in case you were wondering where in the world I am and why I haven’t been present in the blogging/social media world lately.  And you guys, a life (and a life well lived at that) is something worth celebrating!  My Papa left an incredible legacy with our family, and I will always be thankful for the person I am because of the person he was 🙂

 

And I’m going to celebrate with peach cobbler!

You see, old-fashioned peach cobbler (you know the kind…the one that you don’t use canned peaches and you actually have to peel them and cut them yourself) is one of the great joys in life.  You hand-peel the peaches, and are taken aback by the glorious, vibrant color underneath.  It’s like a miniature sunset inside each one!

Add a little corn starch for binding…

A little sugar for sweetness…

A little rum for some depth (and for the chef!)

Just mix it all together and bake at 350 for 20 minutes or so.  You want to make sure the fruit is soft before you add the biscuit part to it!

In a bowl you’ll want to mix together some flour, brown sugar, cinnamon, baking powder, melted butter, and milk.  Simple ingredients make the best recipes.

Take the dough and break it into smaller pieces and place evenly around the top of the fruit.  Slide it back into the oven and bake for another 10-15 minutes until golden brown and bubbly around the edges.

Serve with vanilla ice cream and a side of time with someone you love.  Don’t ever let them get away from you without letting them know that they are loved and bring an incredible amount of joy to your life.

That being said, rather than giving you a recipe, I want you all to know that I love you.  I don’t know you, but each on of you has touched my life just by showing up and putting up with my antics and crazy recipes.  You are loved 🙂
