Mini Quiche Madness

Good morning! Can y’all believe it’s already Thursday?  I know I say that every week, but the days just fly by!

Last night for dinner we had Chicken, Broccoli, and Cheddar Mini Quiche inspired by my friend Stefanie!

It’s totally her method that she came up with, but I tweaked it with what we had on hand (and I cut the recipe in half):

  • 1 cup frozen broccoli florets, thawed and chopped
  • 1 rotisserie chicken breast, chopped
  • 1/4 cup shredded cheddar cheese
  • 4 eggs
  • 3/4 cup milk (I used nonfat cow’s milk)
  • 1/4 cup flour
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Old Bay Seasoning

Preheat oven to 350.  Spray a muffin pan (ours only holds 6) liberally with cooking spray.  Put the broccoli (or any veggie you like) in to about 1/4 of the way up.  Next add the chicken (or whatever meat or extra veggies you want).  Top with cheese (again, whatever you want or have on hand).  In a mixing bowl whisk the eggs and milk together until fluffy.  Add the spices and the flour, and whisk til there are no clumps.  Using a 1/4 cup measuring cup, pour the egg mixture on top of the broccoli/chicken/cheese combo, filling til just below the rim.  Bake at 350 for 25 minutes or until the quiche is no longer jiggly.  Serve immediately!

We had a big salad along side the quiche:

And a hunk of roasted garlic bread rounded the meal out!

Last night I cleaned our house like a madwoman because my mother- and sister-in-law are coming to stay for the weekend!  We wanted everything to look nice when they got here, so we dusted, did laundry, vacuumed all over, cleaned the bathrooms, deep cleaned the kitchen, and set out towels and bedding.  Should be a great time, and we are very excited to see them!

This morning I’m going in to have some blood work done, so no breakfast til later.  Before you start to worry (that is, IF you were starting worry), don’t.  I don’t have any problems that I know of, but when I was discussing my family’s health history with my doctor last week she suggested I get some blood work done just to be safe.  There’s a lot of high cholesterol and blood pressure problems in my immediate family, and it makes me very susceptible to those same problems.  Not to mention it’s just a good idea to get checked out anyway!  I’ll be sure to let y’all know how everything goes as I find out 🙂

And as for the cookies?  Well, I concocted fabulous new cookie that will be named later today (you know, after I get to eat it and all :)), and I’m so excited to share it with y’all!  I’m sure that the moment I talk about it someone will say, “Hey, I’ve had that kind of cookie before!” but for now we’ll just pretend I’m a genius 🙂


Have you ever had blood work done before?  If you feel OK sharing, what was your experience?  What did you get it done for?  And did the results change your life at all? Like I said, I don’t really know what to expect.  I’m not scared of needles or the actual procedure, but I am slightly worried about the results.  I wouldn’t be surprised if there were some major dietary changes happening as a result of it all, but I suppose we’ll cross that bridge when we get there!

    It should be no big deal. I get blood tests done routinely just to make sure I am healthy and to check my iron.

    Those quiches look scrumptious! I’ve never had blood work done for anything, but I have a friend that routinely gets it done to check her thyroid levels, and it’s no big deal to her at all. I hope yours goes okay!

    Love, love the mini quiches! I got bloodwork done last year to see if I was ovulating or not. Turns out I wasn’t so I’m happy I got it done! It’s kind of hard to make babies when you don’t ovluate.
    TMI… I know… but you asked 🙂

    I think its VERY important that you get bloodwork done. Sometimes you think you might be perfectly fine but then…like my brother in law, skinny guy, pretty fit, eats mostly chinese food so we all thought he would be perfectly healthy. Turns out he eats too much pork and meat so his cholesterol was really high. Now he eats more fish and chicken and he’s back to normal now.

    I had work done before too and it came out fine. I’m sure yours will too but its good that you’re getting it done. I think it’s important to keep on top of it every once in a while.

    PS. My bf swears he doesn’t like quiche but I think he will have to change his mind if I make these!

    I have blood drawn every month because I suffer from hypothyroidism and low blood platelet counts. None of them are genetic, but with medication they are all being managed!! 🙂 GOOD LUCK with your blood draw!! 🙂

    Ohh.. blood tests are my nighmare! I just wrote a post last week about being scared of needles and I absolutely hate giving blood. Luckily the results have always been good, but I do hate the process 🙁

    Wow you dinner looks really good 🙂

    I ask for full blood work once year when I go to my GP for annual check up. We have high cholestrol and blood pressure from both sides of family and my mom had thyroid problems so I get everything checked plus it is good to know if there are any vitamins and mineral deficiency. I get mine done next Friday 🙂

    Good luck today! Eeeekk blood works makes me pass out, so I have to lay down when I had to get it done 😐

    I used to be very low in iron and had to get that checked 🙁

    The only blood work I’ve had done was related to pregnancy. It’s no fun, but knowing things about your health is nice. I’m sure it will all turn out well.

    The new doctor I saw yesterday wants me to have a complete work up. I’ve just chalked it up to me getting to that age where it’s good to have a baseline.

    I had bloodwork done from infancy to 13 or 14 because I was anemic. My mother like to tell the story of when I was 4 it took 3 nurses plus her to hold me down for it. She never got how much it hurt to have blood taken from your finger until years later when she had to have it done

    Hey girl, you’re looking at the queen of getting blood work :/ I get it done at least every couple of months to check on my thyroid and cholesterol. I actually *just* got results back that show my cholesterol is going down (yay!). I really wouldn’t be worried about the results. These days it’s so much better to know what’s going on asap because there’s always something you can do to! And coming from someone who has had high cholesterol all her life – it’s really not a huge deal. Good luck, and keep us posted! 🙂

    Those mini quiches are cute and look delicious!

    I have blood work done at my yearly check ups. My potassium levels are checked, cholesterol, etc etc. It’s no big deal. I’d rather catch something sooner rather than later!

    yup-lots of bloodwork here, from confirming a pregnancy to testing for celiac.
    latest test was a couple weeks ago to test for anemia, thyroid, and vitamin D levels.
    turns out D levels were way too low.

    Don’t be too anxious about your results, hon. If they find something that can be prevented/treated than it’s better to find out now than find out when it can’t be prevented or treated.

    I had to get blood work done about 3 years ago after I suffered a concussion (roller blading accident – wear a helmet) then knocked myself out a second time. I’m a klutz is all I can say. I HATE needles. The only other time I had blood done I was 17 and passed out cold on the poor nurse.

    Hi, I always read, never comment, but I am quite familiar with bloodwork. They do the full panel on me every year, so the waiting I’ve become used to. Last year’s news was pretty bad. My bp was crazy high for more years than it should have been, and my liver was pretty mad at me, too, for not eating right. I was scared, and it completely changed my life! I adopted this healthy-living lifestyle (I read your and other blogs to stay motivated). I lost a bunch of weight, eat wholesome foods and exercise every day now.

    Don’t worry about the results too much. You seem to live a pretty heart-healthy lifestyle, so things are likely OK 🙂 Good luck!

    Why is it that you can put the word “mini” in front of anything, and it makes it taste even more delicious? Love it!

    I always get a full workup every 1-2 years, but I still get my blood taken ever 3-6 months because I am hypothyroid. I hate needles, but I just know not to look when they are doing it. I also always just think of how blessed I am and that there are so many others suffering and so many worse things in the world than getting blood taken.

    I also think of that when I’m at the dentist. 😉

    I have had more blood work than I know how to count and have had it for a number of health reasons. Waiting for the results can be scary but hang in there, it will all work out.

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
