Morning everyone!  I’m so baffled by the fact that the South and Texas is getting all the cold weather!  I’ve heard from several sources that there’s been rain, sleet, and snow!  Well, guys, it’s sunny and 50-something here in Colorado.  Go figure 🙂

Last night was so much fun!  First, we went over to Austin + Ashley’s house in Littleton, and our other friends Landon + Sara were in town too!  It was so much fun…these guys and gals are seriously some of the funniest and sweetest people I’ve ever known.  Austin + Ashley are fantastic hosts, and they had a fabulous dinner prepared for us!  We started off with spinach dip in a bread bowl (drool):And then we had salads with strawberries, toasted walnuts, fresh goat cheese, and balsamic (double drool):

And then, as if there could be more great food, we had these amazing calzones with whole wheat crust!  There were 3:  Italian sausage, spinach + goat cheese, and spinach + mozzarella:

I had a piece of each one, and totally wanted to go back for more, but somehow I was able to stop myself.  I don’t know how it happened, but I was so thankful I did because we ended our fabulous meal with these unbelievable red velvet cupcakes in honor or Sara and Nate’s birthdays!

Aren’t they cute?  I told them it looked like they had animated our desserts!  Ashley works as a store designer for Anthropologie, so their whole apartment is super cute and creative, and their cooking is always amazing.  I’m really going to miss them when they move to Dallas, but I think we’re going to try and do a snowshoeing trip sometime before they leave!

We had to leave earlier than we wanted because Nate’s car was still at the convention center for SIA and the time had expired.  We were pretty lucky he didn’t get a ticket!  While we were there, we got a call saying everyone who worked the booth at SIA were at Lucky Strike in Denver, which was just around the corner from where we were.  Since our company was paying, we stopped by and got a couple beers.  I’m glad we did because we got to meet one of our co-worker’s girlfriends, who is just about the cutest thing ever.  We had a great time talking and watching slightly inebriated people bowl and dance!  Before I knew it, it was almost 12, so we headed home since Nate was planning on getting up early to go skiing at Eldora today.

Sleep was great, and I had yet another breakfast cookie and a massive cup of water this morning while watching FoodNetwork.  What a great way to wake up!

I was hoping to be able to hit up the Farmer’s Market Ashley was raving about in this post, but it turns out we’re working SIA again this afternoon, and I have a ton of stuff to get done around the house (i.e. de-pooping the backyard!!!) before we go down there.  I’m hoping I’ll be able to go soon!  We don’t get down to Denver nearly as often as we’d like, but a sweet year-round Farmer’s Market might be just the thing to get us down there!

    Lucky that you still have farmers markets! I just love walking around them and checking things out. Anthroplogy is the cutest store but so expensive. Lucky that your friend gets a discount, you should get in on that deal.

    Wow, Im sooo super jealous of your dinner last night!!! YUMMOOO!!! haha
    The weather here is sooo cold, I won’t even walk the two blocks to the gym to workout because my face freezes as soon as I step foot out of the door. I’m driving to the rec…thank goodness for free parking on the weekends!

    spinach dip in a bread bowl = heaven. i keep seeing crazy snow on everybody’s blogs today, but here in the san francisco bay area it’s perfectly sunny and warmish! i just got back from the year-round farmer’s market..hope you get to go to the one in denver!

    Ok.. that just may be the perfect meal ever created. Spinach dip is amazing by itself but in a bread bowl.. holy cow!! And I love calzones. Also, red velvet cupcakes, or red velvet cake in general, is probably my favorite dessert ever.

    I live in Upstate SC and we have gotten a lot of snow. But now it’s sleeting which then covers the snow with a giant sheet of ice… yikes! they are predicting it to get worse, which makes travel a no-go. SO i’ll be spending the evening at home instead of going out tonight. Which is ok, every once in a while a low-key evening is great. I’ll curl up on the couch with a blanket, eat a delicious dinner, and watch a good movie 🙂

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
