YAAAAAAAAAAAAAAAAAAAAAAAAAAWN!!!!

Good morning everyone! Man, I am one sleepy girl today…last night we had the privilege of doing the photography for the WillPower Method DVD launch, and we didn’t get home and in bed until 12:30!  Apparently that is now past my bedtime…long gone are the days of college when I could stay up til 3 and wake up at 6 and never bat an eye!

Yesterday I FINALLY got my green monster I’ve been craving!  This beaut had 1 cup of milk, 1 cup of frozen strawberries, 1 fresh banana, and 1 cup of spinach:

Mark my words, smoothies in a jar are going to over the world! Work was a whirlwind to say the least, so by lunchtime I was starving and very much in need of food.  Enter some leftover Spicy Chicken Sausage, Eggplant, and Zucchini Bake:

Molto delizioso! After work we rushed home, changed clothes, and booked it to downtown Denver for the party at the Beauty Bar.  Now, the Beauty Bar was actually a pretty cool place…it’s a chain of sorts in major cities across the country, and it’s basically decked out like an old-school beauty parlor.  There’s glitter on the walls (is that Ke$ha I hear in the background…?) and pink everywhere and old pictures of women (not the REALLY old creep kind where no one’s smiling) bedecking the walls.  I really enjoyed it!  It would be perfect for things like really girly bachelorette parties or birthdays or girls’ nights out.  Anyway, dinner prior to was a kid’s meal from Sonic – klassy with a capitol ‘K’ 🙂

Upon arriving home we checked the mail and I found the book I ordered a couple days ago:  Eat Pray Love!  As most of you might know, Angela’s been doing a review of sorts on her blog of the book, and I have been meaning to read it for a while now.  I decided to take the plunge and just order it rather than count on myself to remember to go to Barnes & Noble to get it 🙂

I really can’t wait to start reading this, although I know I’m going to be investing in a box of tissue to go along with it.  Turns out books that feature someone trying to find their way through life tend to make me cry a little (or a lot)!


What books are you reading these days?  What are they about?  If you’re not reading anything currently, what kinds of books do you normally gravitate to? We are finishing up The 4-Hour Work Week, and then I’m planning on reading Eat Pray Love immediately after!  I would say I tend to go more towards inspirational true stories, cookbooks, and anything written by Francine Rivers 🙂

    I read random stuff from Dean Koontz (great writer) to biographies. A couple of really good books I have read this summer are 1) Three signs of a miserable job – sounds funny but if you are starting a business it is great for the boss to know certain techniques to keep his employees happy. It recounts this guy who was a CEO of how he worked a couple of jobs and was successful. 2)To live a thousand lives – talks about how we can live our lives and leave a legacy behind for each generation that follows so that it goes on for generations.

      I loved loved loved EPL. I actually keep a copy of page 283 on my desk and read about the day Liz and Felipe spend at the beach in Bali. It reminds me to go slow, enjoy life, and appreciate the little things like freshly caught fish, cold beers and chilled fruit interspersed with swimming, napping, reading, and spending the day with a loved one.

      I also loved 4 hour work week and being self-employed, I took away quite a bit of good information – mostly because it reminded me to stay focused on what’s important to me – which is to work less, live more. My favorite part of that book was the story of the American businessman and the Mexican fisherman who after a little work in the morning liked to sleep late, fish a little, play with his children, take a siesta with his wife, stroll into the village, sip wine and play guitar with his friends – A full and busy life!

    ummm, Francine Rivers is the BOMB DOT COM!! I LOVE her books….I also tend to gravitate to biographies, and historical fiction.

    of course, every summer, I also stock up on all that fab Chic-lit, that makes every poolside lounging Saturday that much brighter 🙂

    I am currently reading Difficult Conversations which is teaching me how to discuss what matters most. I am not the best communicator and I am hoping this book will help change that.

    I really do need to read more books. Besides the Bible, I’m not reading anything right now. Which really is sad. Because there is nothing better than getting lost in a good book. As far as my book preferences go, I’ll read anything from Nicholas Sparks to marriage books, to Christian women writers.

    I loved reading Eat, Pray, Love so much! I’m certain you’re going to enjoy it. If you’re looking for a fiction novel, I recently read The Help, and it’s great. And for a memoir, I just finished Beautiful Boy, which was a sad but worthwhile read.

    that book is great!! the last chapter was a little boring, to be honest, but the beginning &middle are can’t-put-this-down fun/interesting 🙂

    I just finished Audrey Niffenegger’s ‘Her Fearful Symmetry,’ which I loved! I couldn’t put it down if I tried. She is the author of The Time Traveler’s Wife – my favorite book I’ve ever read. She’s a little dark, but her writing is so light, and her words are alive.

    I have that book on hold for me at the library. Right now though I’m reading a Sookie Stackhouse book – the vampire series from True Blood. LOL Gotta have variety.

    I read a few Jennifer McMahon books on our trip, and they were good– scary!!! But good.

    Yep…12:30 is officially a “late night” for me too now…when did we get so old?!? 🙂

    I really enjoyed Eat, Pray, Love and am psyched about the movie! I do have to say the India section was a little slow (guess I’m more of an eater/lover than prayer). Hope you enjoy it!

    I’m really worried I won’t like EPL – I want to read it but I’m such a book snob! Let us know how it is! Right now I’m reading In Defense of Food (Michael Pollan) but my favorite books are serious literature with complex story structures and themes and things to be analyzed and dissected. I was an English major in college – like I said, literary snob.

    Your posts always make me HUNGRY.

    I am currently reading the Sookie Stackhouse series– but I usually like to read food/exercise books (last one I read was “This is why you’re fat by Jackie Warner) or motivation/self help books (The Secret, The Magic of Thinking Big).

    Everyone keeps talking about EPL, I may just have to pick it up for myself!

    Enjoy EPL! It’s a book I constantly turn back too. Definitely one of my favorites. Thought I must admit I am a sucker for books that feature people on journeys trying to create themselves.

    I’m the exact same way – I have such a hard time if I go to bed passed 11 and need to get up at 7. What’s crazy is that I used to work the overnight shift and still could go to the gym, classes and out. I feel old.

    Right now I’m starting on the The Girl With The Dragon Tattoo – I heard so many good things but life has been busy so I’m just getting it to it. Loving it so far.

    I gravitate towards historical accounts, like My Life with Jaqueline Kennedy (love this book), Jack and Jackie (love this book too, what? Idon’thaveanobsessionwiththekennedies), and books from the Holocaust amongst others. Have you ever read Night? Really haunting.

    I loved Eat Pray Love. I have probably read it like 4 times now. I just finished up The Happiness Project which is interesting to pair with Eat Pray Love. Now I’m on to The Girl with the Dragon Tatoo series. It is quite possibly one of the best series I’ve ever read. I’m on book two and am totally sucked into it.

    Just discovered your blog! 😀

    I’d love to read Eat Pray Love, but I have a feeling I won’t get around to it until after the movie is released… I’ve heard that most people love it! (but that tissues are necessary!)

    I’m currently reading Dan Brown’s “The Lost Symbol,” and it’s pretty good so far!

    I read that book half way through then stopped but I must get back to it before the movie comes out. LOVE julia roberts!

    My boyfriend is currently reading the 4-hour work week. I’ve gotten mixed reviews from him, it sort of sounds like a get rich quick scheme and dont do any of the work. I just finished Emily Giffin’s new book and loved it!

    I really liked Eat, Pray, Love. It’s one of those books that I got from the library, but ended up wanting to give it a permanent home in my personal library.

    I tend to gravitate toward cookbooks and crafty books (knitting, sewing), memoirs, and chick-lit type stuff, with the occasional mystery thrown in.

    I just started The Girl With The Dragon Tattoo. I’m sure I’m probably the only person left who hasn’t read it yet, so I figured I’d get on it. 😉

    Yum! Now I want a smoothie!! Also, I feel like I’m the only person in the world who didn’t love Eat, Pray, Love, I started it like 3 times, got halfway through and always went on to another book:( Maybe the movie will be better for me.

For my @fasterwaytofatloss friends, here’s an AM For my @fasterwaytofatloss friends, here’s an AMAZING low-carb day dish: roasted cauliflower with smoked paprika and almonds! It’s so simple to make, incredibly flavorful, and pairs really well with truly any protein. Enjoy!

ROASTED CAULIFLOWER WITH SMOKED PAPRIKA AND ALMONDS
* 1 head cauliflower, cut into small florets
* 2 Tbsp olive oil
* 1 tsp salt
* 1 tsp smoked paprika
* 1/2 tsp garlic powder
* 1/2 tsp pepper
* 1/3 cup slivered raw almonds
1. Preheat oven to 375.
2. Spread the cauliflower florets onto a large baking sheet and drizzle with olive oil.
3. Sprinkle evenly with salt, pepper, paprika and garlic powder, then toss to evenly coat it all.
4. Roast at 375 for 25 minutes, tossing halfway through.
5. When there are 3 minutes left, open the oven and sprinkle the almonds on top.
6. Roast for another 3-4 minutes until the almonds are just lightly toasted, then remove and serve immediately.

I remember when I wasn’t sure it would sprout at all, and then one day the seed split and there it was! We also hit a point November-January where there was zero growth and I wondered again if it was a waste of time.

Now there are new leaves, new height, and (most importantly) stronger roots, all because of a little patience and care (it’s a metaphor y’all 😆). I find myself excited about the next season where it will be planted in dirt, which will offer new challenges - and growth- of its own. What a blessing to learn such deep lessons from a humble seed!

God, thank you for the little things that show us how much the little things matter. Amen.

Wanna know what DOES work though? This amazing new deodorant! The biggest question I get about cleaner products is always about which is the best natural deodorant. Friends, I’ve found some decent ones in the past, but this one takes the cake!

One of my physical health goals this year is to gain lean muscle and get stronger, which means that I need to be getting enough protein in on a daily basis. For me a great source of lean protein is chicken breasts, but if they don’t taste great I’m not having it! So, if this is you, I have a solution for you: BRINE YOUR CHICKEN BREASTS! 

Here’s my fail-proof brine recipe for perfectly flavorful chicken breasts. Cook ‘em however you want - just make sure you brine them first! The difference is enormously worth it!

Recipe is for about 4-6 chicken breasts:
•3 tablespoons kosher salt
•3 tablespoons honey
•2 cups lukewarm water
•2 cups cold water

In a large saucepan bring the first 3 ingredients to a simmer. Remove and stir until the salt is dissolved, then pour in the cold water. IT MUST BE COLD - otherwise the brine will start to cook the chicken breasts! When the mixture is lukewarm, add the chicken breasts, making sure they’re covered in the brine. Cover and refrigerate for 1-6 hours (I recommend 6 if you can). When they’re finished, remove from the brine, rinse, pat dry and cook as desired!

I love running, walking and hiking, but weather, childcare, and a certain global pandemic make consistently getting out to do those kinda difficult. I’ve always enjoyed my #homegym, but quality cardio equipment is expensive! 

So what’s a girl to do?

This past fall I randomly decided to look at steppers, and found this @sunnyhealthfitness one on @walmart for $50! I just wanted something that I could use for 20-30 minutes 4-ish days a week, and it’s been an amazing fit. Would I like a Peloton? Duh, of course. But this has worked so well with the budget and space we have!

What’s your biggest struggle in curating a home gym?

I was weird about it first, felt like my problems weren’t big or messy enough to warrant professional help. And when I did start seeing my counselor I was awkward (this shouldn’t be a surprise). But here we are 4 months later and I’m seeing some incredible life-giving movement. God is so good, and I’m so thankful for friends who normalized counseling and therapy for me!
So. It’s been a while since I posted on the feed So. It’s been a while since I posted on the feed (or really in my stories too). Truthfully I’m still heavily processing the last 2 months, which were preceded by 10 other hard months. Life is brutal and beautiful and next-level hard and a joy, all swirled together. I won’t pretend that everything is OK; it’s not. I’m not.

This past weekend I had a moment of complete clarity and joy and the knowledge that I will be OK. And for that only-God moment I’m so thankful. For all of you who have been praying for our family, who have offered the sweetest words and condolences, who have truly been there, waiting and wading with me through the hard - thank you. God is still good. He is still on his throne. And I am so unwaveringly thankful for that!❤️

I have so many thoughts swirling around in my head these days, and half the time I don’t know which way is up. But I do know this: focusing on simplicity is the name of the game this year for me. It starts with the things I can control: my food intake, moving my body, my thoughts, my actions. The rest will stem from there!
