When it comes to being bold in the kitchen there’s really not a lot of things I won’t try. It’s not only part of my job, but part of my skill set and how I’m wired – it’s where I feel the most creative, the most at home, the most in charge. The kitchen – really any kitchen – just feels familiar, like an old friend, even when there’s a rambunctious toddler pulling everything out and rearranging it for me.
The one thing I still had yet to try and had always wanted to was croissants – but you guys know that already. I love the flaky layers, and while I knew what needed to be done I just didn’t know if I had the time or the energy to get it done. This #liveboldly challenge, however, demanded that I do it. It’s not enough to dig deep and figure out that there’s more issues in this girl’s heart than she initially thought; I had to get my hands dirty and my belly full of croissants too 😉
The croissants. They really aren’t that hard, just time-consuming. And when you’re me and realize that OH CRAP! I HAVEN’T MADE MY CROISSANTS YET! you don’t really read through the full directions first and then find out that you won’t be done until midnight.
I’m not saying hot chocolate croissants straight from the oven at midnight is a bad thing; if anything they’ll make you sleep better.
These guys are seriously delicious, totally worth it, and while I can’t see myself making scratch-made croissants every day I am SO GLAD that I went for it! I made the recipe exactly as Jessica did here, and it was a perfect tutorial. Do it!

Nice work! Croissants are the BEST. I have made them once before when I ate wheat and I did the same thing as you, didn’t realize they would be ready at 3 AM. Sheesh. Actually they were too much work for me! Congratulations on such a feat!
