This weekend I was chatting with a friend about our kids. Not news, really, since if you know me at all you know I’m down with talking about my kids all day long, and probably to a fault. The thing that made this conversation so helpful, though, was that we were both talking about how much we struggle to get our kids to eat the things we want them to eat. For me it can be a multiple-times-a-day struggle to get the tiniest bit of food in their mouths. So if that’s you? Well, you should know you’re not alone.
BUT another thing that we concluded in that conversation was that there are just days when they get what they want, and that’s OK too. Sometimes that means a smoothie for breakfast, a popsicle for lunch, and a cupcake for dinner. Sometimes. Allegedly. While that might not be, ahem, ideal it’s also just life. Most days we eat salad and chicken, but occasionally it’s something else. Balance, right?
The one thing that we can agree on, though, is that pizza is delicious and something we should have on hand most of the time. I can’t imagine a better time to always keep some in my freezer than football season! Fall is the perfect time of year to have friends and family over, and there’s honestly no better way to keep everyone happy than just making it a pizza day all around. I found these Red Baron Deep Dish Singles at Sam’s and they have been a HUGE hit in our house for those Sundays when we have friends over, or even when we just want to dig in and have an easy family dinner.
The great thing about these is that in each box there are 6 cheese and 6 pepperoni pizzas, giving everyone a chance to eat what they love. I’m a pepperoni girl all the way, and I love having extra grated Parmesan and Ranch dressing to dip it in. We all know that calories don’t count on game day, right?
Here’s a little pro tip for you: when you get these single pizzas you can fancy them up by adding them to a cheese board, or making a pizza board with them. It’s super simple: bake the pizzas according to package directions, being sure to let them cool enough that the cheese won’t be too stringy when you cut them. Next, cut the pizzas into sixths – the perfect size for snacking in my opinion! Finally, arrange them on a nice big cutting board and then nestle any of your favorite pizza accoutremonts in with those slices. Parmesan, extra mozzarella, Ranch, hummus, honey (I know how you roll Colorado!), dried herbs, etc. The world is your oyster people!
Final step? Place this goodness in front of the people you love to watch football with. It makes a great spread while everyone’s around the couch watching whatever big game you can’t miss this season. Just make sure you make multiples!

I love this idea. The cheese board is really neat.
