Hidden Treasure Cookies

Butter recipe cake mix.  It’s where it’s at.

I remember once upon a time, back when Nate and I had been married less than a year and I was still considerably in my early 20’s, we went to a small group and my friend Melanie brought these cookies as a treat for everyone.  And ever since that day I’ve been bombarded with questions as to when I’ll ever make anything that matches up to them.

OK, so that last part isn’t true.

Give Nate some chocolate chip cookies and he’s a happy man; however, there have been moments in the past 4 years that these cookies have been brought into conversation ever so casually:  When will I make them?  What will the ‘treasure’ be?  Will they ever, ever, EVER taste as good as Melanie’s?

Well my sweetheart, today is the day.  The treasures are Reese’s and Rolos, and yes they DO taste as good as Melanie’s [I think].

And if you’re smart you’ll agree 😉

These cookies are cheap, they’re easy to make, and require practically no measuring.  I like using a box mix (butter flavor only!) because it’s consistently wonderful and then I only actually need a whopping 4 ingredients.

They’re the epitome of semi-homemade, and quite frankly it doesn’t even matter.  Because if you’re anything like my adorably, cookie-loving husband you’ll probably fall in love and count the days til you make them again.

HIDDEN TREASURE COOKIES

  • 1 box butter recipe cake mix
  • 2 eggs (you can also make these with a flax or chia egg if you don’t have any real eggs at home…not that I know anything about that)
  • 1/3 cup oil
  • assorted chocolate candy (use what you love!)

Preheat oven to 350.  Mix the eggs, oil, and cake mix in a bowl.  Refrigerate for 30 minutes.  Remove from fridge and scoop into 2 Tbsp-sized scoops.  Press a piece of the chocolate candy into the center and roll the dough around it, forming ball.  Place on a cookie sheet lined with parchment paper or a Silpat; bake at 350 for about 8 minutes until golden brown.  Remove from baking sheet and eat to your heart’s content!

Now if you’ll excuse me, I’m off to tell Nate that he no longer has to wait in excess of 4 years for cookies he loves.  And all I have to say is thank goodness I won’t be wearing a bathing suit again for a while…
