Healthy Spinach Artichoke Dip

There’s one appetizer that, if all else fails, we WILL order at a restaurant:  spinach artichoke dip.

Hey, it’s what we do.  We look at other options and then go with the one that we know we’ll both love and consume way too much of.  What’s wrong with that?  Nothing.  Nothing at all.

 

However, I have to say that I’m a homemade spinach artichoke dip virgin.  Never made it, never even attempted it, unless you count the TGIFriday’s frozen appetizers or Lay’s jarred dip.  And I bet you guys aren’t going to count those, are ya?  I didn’t think so.

 

This dip has all of 4 ingredients and tastes heavenly.  Plus if you eat a little too much of it it’s OK – it’s healthier and therefore you can eat more.  Obviously that’s how the laws of nutrition and thermodynamics work.  Obviously.

HEALTHIER SPINACH ARTICHOKE DIP

  • 1 box frozen spinach, thawed and with the liquid squeezed out
  • 1 bag frozen artichokes, thawed and with the liquid drained away
  • 2 wheels of Laughing Cow Swiss cheese (you can do the light version here as well)
  • 1 tsp garlic powder
  • ¼ tsp cayenne pepper
  • salt and pepper to taste

 

In a food processor (or, if you like it chunky you can just mix in a bowl) process all of the ingredients together.  Spread into an oven-proof dish and bake for 20 minutes at 400 until the top is browned and bubbly.  Serve hot with crudite, pitas, or your favorite chips.  Devour.

 

I repeat:  DEVOUR.  🙂

    This looks great! I loooveeee Laughing Cow cheese wedges, so being able to transform them into a spinach/artichoke dip is a great idea 🙂

          I used the whole wheel of wedges – i can’t recall exactly the number of ounces though!

    I am making this dip on Monday for a Halloween party–very excited to try this recipe! One more question, though: Do you know what size the box of spinach is? And what size the bag of artichokes is? I just need to know cups or ounces so that I am sure to get it right. Thanks so much!

    Is this version of the dip a little spicy (due to the cayenne pepper)? Love spinach artichoke dip and love the idea of making a healthier version, but my family and I are not fans of spicy foods. Thanks!!

      It has a little kick to it from the cayenne, but if you don’t like spicy then you can just eliminate it – it’s still delicious without it 🙂

    The #1 appetizer we will order at a restaurant is bruschetta. Although, spinach dip is a close second. This version looks delightful and light. Bookmarked!

    ever so good, mmm, and that was just from tasting before I baked it!

    So simple, so good.

    The only deviation I had to do was use fresh steamed, drained spinach
    and one can of artichoke hearts, drained, as my local market had neither frozen.

    I actually never seem to like most restuarant spinach/artichoke dips. They always taste “fake” to me for some reason. This one looks legit though. I could eat a whole circle thing of laughing cow cheese in a sitting so it’s gotta be good 🙂

    You are totally right. Even when ordering it at the restaurant, and knowing it’s one of the most unhealthy appetizers on the menu, I still convince myself that it’s the best option because hey, it’s got spinach in it and that’s healthy! Good job actually making it healthy 🙂
