There’s one appetizer that, if all else fails, we WILL order at a restaurant: spinach artichoke dip.
Hey, it’s what we do. We look at other options and then go with the one that we know we’ll both love and consume way too much of. What’s wrong with that? Nothing. Nothing at all.
However, I have to say that I’m a homemade spinach artichoke dip virgin. Never made it, never even attempted it, unless you count the TGIFriday’s frozen appetizers or Lay’s jarred dip. And I bet you guys aren’t going to count those, are ya? I didn’t think so.
This dip has all of 4 ingredients and tastes heavenly. Plus if you eat a little too much of it it’s OK – it’s healthier and therefore you can eat more. Obviously that’s how the laws of nutrition and thermodynamics work. Obviously.
HEALTHIER SPINACH ARTICHOKE DIP
- 1 box frozen spinach, thawed and with the liquid squeezed out
- 1 bag frozen artichokes, thawed and with the liquid drained away
- 2 wheels of Laughing Cow Swiss cheese (you can do the light version here as well)
- 1 tsp garlic powder
- ¼ tsp cayenne pepper
- salt and pepper to taste
In a food processor (or, if you like it chunky you can just mix in a bowl) process all of the ingredients together. Spread into an oven-proof dish and bake for 20 minutes at 400 until the top is browned and bubbly. Serve hot with crudite, pitas, or your favorite chips. Devour.
I repeat: DEVOUR. 🙂

This looks great! I loooveeee Laughing Cow cheese wedges, so being able to transform them into a spinach/artichoke dip is a great idea 🙂

One question…. Do I use the mini wheels or the wedges of cheese?
Thanks and I cant wait to make it!
Heather says
i used the wedges – they’re creamy and delicious!
Tara Masucci says
how many did you use?
Heather says
I used the whole wheel of wedges – i can’t recall exactly the number of ounces though!

Just saw this on Pinterest and I love spin/arti dip. I made some over the weekend, but it wasn’t with Laughing Cow. Good tip…need to try that!

I am making this dip on Monday for a Halloween party–very excited to try this recipe! One more question, though: Do you know what size the box of spinach is? And what size the bag of artichokes is? I just need to know cups or ounces so that I am sure to get it right. Thanks so much!
Courtney says
Is this version of the dip a little spicy (due to the cayenne pepper)? Love spinach artichoke dip and love the idea of making a healthier version, but my family and I are not fans of spicy foods. Thanks!!
Heather says
It has a little kick to it from the cayenne, but if you don’t like spicy then you can just eliminate it – it’s still delicious without it 🙂

Thanks Heather!!

Much healthier than the traditional cheddar and cream cheese recipe! Cheers to you 🙂

Artichoke for a dip? this I got to try.

The #1 appetizer we will order at a restaurant is bruschetta. Although, spinach dip is a close second. This version looks delightful and light. Bookmarked!

Oh thankyouthankyouthankyou,
ever so good, mmm, and that was just from tasting before I baked it!
So simple, so good.
The only deviation I had to do was use fresh steamed, drained spinach
and one can of artichoke hearts, drained, as my local market had neither frozen.
Mmmm. Thanks again!

Okay so all I can really say is…thank you for this. THANK YOU.

this recipe totally wins for girls night snackage!

This looks incredible! I made something similar yesterday which I then turned into a fancy-pants lunch (https://thesplitpindiary.wordpress.com/recipes-2/dips-spreads-and-sauces/spinach-artichoke-dip/), but I really like the simplicity of your ingredient list here. Must try 🙂

Looks great! I didn’t know you could get frozen artichokes, I’ll have to look for them.
Emily @ A Cambridge Story says
Genius! I love spinach and artichoke dip and was JUST thinking about the possibilities with the laughing cow cheese wheel. This is perfect!

My favorite dip! Glad that there’s a lighter version of it :))… thank you for sharing… definitely going to make this!

I love artichoke dip!!! Yum 🙂

I love making my own spinach/artichoke dip at home. The lighter ingredients let me eat more 🙂 Your recipe sounds awesome! I’ve never used a recipe with Laughing Cow before. I like it!
Gina @ Running to the Kitchen says
I actually never seem to like most restuarant spinach/artichoke dips. They always taste “fake” to me for some reason. This one looks legit though. I could eat a whole circle thing of laughing cow cheese in a sitting so it’s gotta be good 🙂
Anna @ Newlywed, Newly Veg says
Definitely one of my favorite restaurant items…even with the puddle of grease that usually forms overtop the dip, haha!
Claire @ Live and Love to Eat says
This is so much simpler than my cream cheese/yogurt version. Thanks for the idea!
Lauren at Keep It Sweet says
This version sounds delish- such a good idea to use the laughing cow!
Erin says
You are totally right. Even when ordering it at the restaurant, and knowing it’s one of the most unhealthy appetizers on the menu, I still convince myself that it’s the best option because hey, it’s got spinach in it and that’s healthy! Good job actually making it healthy 🙂
