Fully Loaded Brownies

There’s a fire starting in my heart, it’s reaching a feverpitch and it’s bringing me out the dark…

Oh, sorry.  I didn’t realize anyone was listening to me sing…how embarrassing…

 

With these brownies you don’t just almost have it all…you CAN have it all!  It was one of those rainy afternoons, deep into that coma-like pre-nap states, and I was wishing for brownies.  Brownies with toffee.  Brownies with white chocolate chips.  No, make that dark chocolate chips.

 

NOWAIT, brownies with marshmallows!  OH OH!  Brownies with almonds!!!

It was exhausting, and finally – in an attempt to just get over it and go to sleep – I decided that I was going to make brownies with all of those and a little bit of espresso powder.  Probably one of the best ideas I’ve ever had; a level of genius not yet reached until that fateful day when I was trying to justgettosleepalready.

On a side note, I think I’m getting a little more than obsessed with Adele.  I think I’m starting to see how my sister used to think that she could be the next Celine or Mariah on all of those endless roadtrips to California and central Texas.

 

The trick is that if you just listen to the music loud enough then it makes you sound amazing.  And so, my friends, I’m happy to report that I’ve trained myself to sing exactly like Adele.  It’s true…I sound just like her.  Just don’t try to to talk to me while I’m singing…I won’t be able to hear you.

FULLY LOADED BROWNIES

  • 1 2/3 cup sugar
  • 1 1/3 cup + 3 Tbsp all-purpose flour
  • 3/4 cup baking cocoa
  • 1 tsp baking powder
  • pinch of salt
  • 4 Tbsp butter, softened
  • 1/4 cup canola oil
  • 2 eggs
  • 1 tsp vanilla
  • 2 Tbsp espresso powder (coffee powder works too)
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • 1 cup toffee bits
  • 1 cup toasted slivered almonds
  • 2 cups small marshmallows (seems like a lot, but you need some drama with this one!)

Preheat oven to 350.  In a large bowl, cream together the butter, oil, and sugar.  Add the eggs and mix well.  Add the dry ingredients, and mix until just combined.  Fold in the chocolate chips, white chocolate chips and toffee pieces.  Spread into the bottom of an 8×8 baking dish and bake at 350 for 40-45 minutes, or until a toothpick inserted comes out clean.  In the last 5 minutes dump the marshmallows on top and then sprinkle the almonds on top.  Remove immediately when the marshmallows start to brown!

Yes, yes I’ve reached my feverpitch with this one.  And now if you’ll excuse me I’m off to listen to Adele radio on Pandora for, oh, 10 hours.

    Those look incredible. What is it about melty, browned marshmallows that is so amazing!? I love Adele, too, by the way. If I could actually have her voice, I would want nothing more in the world.
