Fresh Pineapple Crisp

Lately I’ve been buying a pineapple a week and eating it while standing up in the kitchen.  Most likely in one sitting (standing?).

 

Oh, and dreaming that I’m in Hawaii, far far away from the cold snow and blustery winds that Colorado has been cooking up for me lately.

I’ve been dreaming of the beach for going on 4 months now and pineapple?  Pineapple is this pregnant lady’s vehicle to get there.  Well, that and my imagination.  Obviously I can’t drive, fly, or ride a pineapple over the Hawaii.

 

Unless that is you know of a way to do so…then by all means share.  I’m not opposed to travel at 8.5 months pregnant!

 

Anyway, make this today.  Pretend you’re on vacation…you and me, hanging out, reading ridiculous celebrity gossip beachside with a Mai Tai in one hand and a plate of pineapple in the other!

FRESH PINEAPPLE CRISP

  • 1 whole pineapple, peeled, cored, and cut into 1-inch pieces
  • 2 Tbsp flour
  • 2 Tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup granulated sugar
  • 4 Tbsp butter
  • 1/2 tsp sea salt

Preheat your oven to 375.  In a big bowl toss together the pineapple, 2 Tbsp flour, brown sugar, and cinnamon and stir until the flour is coating all of the pineapple.  Pour into a buttered 9×9 baking dish.  In another bowl combine the oats, 1/4 cup flour, sugar, butter and salt, and using your fingers press the butter into the ingredients until the final mixture is crumbly.  Sprinkle evenly on top of the pineapple.  Bake at 375 for 30-45 minutes until the pineapple is bubbly and the top is golden brown.  Devour.

You.  Me.  Beach.  Now.

    I don’t have access to really good fresh pineapple, do you think canned in juice will work?

      I think it would work just fine, although I would maybe strain it and only add back about 1/2 of the juice. Let me know how it works out, that would be a great way to make it when pineapple isn’t in season!

      i did too – apparently it’s supposed to induce labor? i would literally eat a whole pineapple in 1-2 days and people were freaking out. then we had to induce labor 1.5 weeks late, so i’m thinking pineapple doesn’t work 🙂

    Looks delicious!

    Be careful with pineapple if you’re at all at risk for going into pre-term labor. The bromalain in pineapple can trigger contractions. If you’re not at risk for pre-term labor, it shouldn’t be a big deal at all. You’d have to eat a huge amount to really see any effects from it.

      wow, thanks Natalie! i had no idea! i’m not at risk for preterm labor, it’s just been a craving i’ve had. i’ll double check with the doctor today though!

    Pineapple crisp!? That is just pure genius! I have never thought to make a crisp with pineapple but it looks so delicious. I definitely want to give this a try. My family loves pineapple.

    We went to Tahiti on our honeymoon and pineapple always makes me think of the beaches there. They had amazing pineapple juice straight from the juicer and it just tasted so much better than making it here at home. I’m convinced it was a secret ingredient even though I’d watch them cut it up and juice it right in front me with nothing else added.
