I’ve always been a big fan of meal prep. Being able to throw dinners together on the fly? Especially on busy, hectic, crazy days a little extra meal prep goes a long way.
That being said I rarely do the meal prep that I should to really feed our family well, but after an indulgent weekend I knew that we really needed to up our salad game this week. The challenge for me wasn’t the prep work, though, it was getting enough good fresh organic food to fulfill our needs!
Thankfully one whole chicken in the crock pot created enough protein for Nate and I to enjoy this week, plus a whole slew of veggies will add some bulk to our meals. I also have a few other things not pictured here – sweet potatoes, nectarines, blueberries to name a few – but this will make up the majority of our dinners.
I gotta say, I am in no way a nutritional expert. I’m just a girl trying to do right by her body and make smarter decisions, especially after a weekend packed with goodies!
Oh, and the meal prep piece? Took me about 20 minutes to get all of this together (the chicken was done in the crockpot overnight), and now we can just toss it together and go. No heat in the kitchen, healthy food in our bodies, and no more trips to the store. I’ll take it!
Here’s what was in the haul:
- 6 hearts of romaine lettuce
- 1 large box of spinach
- 1 package green onions
- 3 avocados
- 1 bunch radishes
- 1 bag of carrots
- 1 huge bag of cherries
- homegrown tomatoes
- raw almonds
- whole organic chicken (I used this recipe to cook it)
- 3 garnet yams
- 1 red bell pepper
- 4 peaches
- 4 nectarines
- 1 pint blueberries
- 1 bunch of bananas
