Well hello!  Long time no blog, right?  I have to say I had the best of intentions in blogging this weekend, but every time we go to Dallas it’s a whirlwind of travel, visiting, and trying to fit in our old favorite restaurants.  Turns out blogging didn’t happen, and neither did taking photos – well, except at the wedding (coming soon) and on my iPhone!

Bunker and Keira were clearly depressed when we left. At least that's what I tell myself since they adore their Aunt Amy!

We listened to Kidd Kraddick in the Morning. LOVE.

Sigh. La Madeleine.

I need to recreate this. STAT.

So many things I want to buy. So little room in my luggage.

My first ever whoopie pie experience! Let's just say this will be recreated soon too 🙂

There were pedicures to be had...I wasn't feeling the black anymore.

Ah, much better. I love me some red toenails!

Church on Sunday morning...love seeing good friends! Especially when it's a surprise!

Please excuse the fact that I look bald and look at my gorgeous sister. I love you Salah!

And finally off to the airport we went. You have to love the Texas pride exuding from this store!

So here’s the rundown:  we left from Denver Thursday night at 8pm and landed in Dallas around 10:45pm, picked up a rental car, and spent the night at Nate’s dad’s house (circa 1am by the time we went to bed).  Saturday morning we got up at 6:30am, drove to Frisco (a suburb of Dallas) where Nate played golf with the other members of the wedding party and I shopped til I dropped.  I ran home to his dad’s house to change, then went BACK to Frisco for the rehearsal and rehearsal dinner.  Bedtime came around midnight again.  Saturday morning we woke up, at breakfast with Nate’s dad, went to Barnes and Noble, then went to Frisco so Nate could start getting ready for the wedding.  I went and got a mani-pedi with Nate’s mom, then got ready for the wedding.  Wedding at 6, reception til 12, after-party til 3.  We got up at 7am Sunday for church, went to lunch with my sister, Nate’s brother, and his mom and stepdad.  After lunch we went back to his dad’s house to re-pack, and off to the airport we went!  It was a blast and we got to see so many friends but I was pretty stoked about just getting home and going to bed.  Not as young as I used to be 😉

    Boo – wish I would have known you were in the area (I work in Frisco) we could have had a 5 minute blogger meet-up (although looks like your weekend was jammed pack). Glad you had a good trip!

    I love the photos sister!!! I am so glad I got to see you this weekend!! I find it hard to be a college student in college….my first two years were crazy but especially this semester I have been forced to grow up :-/

    I’m from Dallas too. Fun to see people’s pics when they visit. It was a happy time to be there with the Rangers win! And we love Le Madeleine. It’s based in Dallas.

    OMG, I totally know what you mean! The hubs and I are in bed BEFORE 12 on weekends sometimes…it’s sick lol. I seriously feel like I can’t party like I used to. Maybe not a bad thing but growing up makes me sad…

    Oh my goodness I feel the same way about my weekend! I had a mini college homecoming at my place and we partied it up way too much. I think I’ll need the rest of the week to recover! The pics of you are adorable! You don’t look bald you nut. It’s a cute headband.

    What a fun-filled, whirlwind of a weekend! I’m sure you are excited to be back home though with cooler temperatures. 🙂

    We spent pretty much the entire weekend doing things for the new apartment…and a little outdoor exercise to keep me sane.

    It sounds like a great, if not hectic, weekend! I do find it hard to party into the morning hours anymore. I like to be in bed by midnight! Aahhh…I miss the the days of my youth! 😉

Working on my #avoquados y’all! This protein smo Working on my #avoquados y’all! This protein smoothie has 40 grams of protein, lots of green goodness and tastes like a pineapple-vanilla dream!

- 1 cup water
- 1 cup frozen pineapple
- 1 cup frozen kale or spinach
- 1 scoop vanilla protein
- 1 serving collagen peptides (I use 2 scoops of @bulletproof brand; some brands just have one big scoop)
- 1 scoop greens powder (I used @amazinggrass)

Blend and enjoy!
🥗 FAST FOOD! Real real: I hate when people are 🥗 FAST FOOD!

Real real: I hate when people are all, “you can cook food in the same time it takes to grab takeout.” That is not always true, and sometimes it’s just about not wanting to try. Effort is hard, amen?!

Today I’m thankful to have had the energy and want-to to cook something a little healthier and save a little money. That’s not always the case, but today it was and I’ll count it as a win!

In the bowl: 3/4 cup black beans, 1/4 cup corn, 2 big handfuls of spinach, and two eggs. Seasoned it all with salt, pepper, garlic and smoked paprika!

Chocolate Peanut Butter Protein Oats! (AKA the thi Chocolate Peanut Butter Protein Oats! (AKA the thing I’ve been eating on repeat all week):

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup milk of choice
- 2 tablespoons brewed coffee (optional)*
- 2 tablespoons powdered peanut butter
- 1 tablespoon cocoa powder
- 1 tablespoon ground flax seeds
- 1 serving unflavored collagen peptides
- Sweetener of choice
- 1 tablespoon chocolate chips

Heat the oats, water, milk and coffee in a small saucepan over medium heat. Cook until thickened to your liking (although keep in kind the flax seeds and cooling will thicken it even further). Remove from the heat and stir in the remaining ingredients except the chocolate chips; I like to use a whisk to make sure the collagen doesn’t clump. Pour in a bowl, sprinkle with the chocolate chips and enjoy!

*I love to add a little coffee to mine to help enhance the chocolate flavor, but you do you!
And sometimes this is what it means to “work fro And sometimes this is what it means to “work from home.” 😂
Mentioned this yesterday in the ol’ stories, but Mentioned this yesterday in the ol’ stories, but thought it was worth sharing here too. When it comes to how I plan out meals, I look for 3 things:

🥗Whole foods. Not like the store (that’s called Whole Paycheck, right?), but meaning foods that haven’t been minimally processed. Fresh veggies, lean protein sources, whole grains, etc. I do have a few processed things on hand (protein bars) just in case I’m in a place where I need something SUPER quick, but that’s it. 

🥗High fiber. There are so many reasons we should be getting in plenty of fiber (Google is your friend here guys), but if I’m being honest I just feel better when I’m getting plenty of it. Leaner, more regular, more satiated. The list goes on! Besides the obvious fresh produce, I also eat plenty of legumes, whole grains (rolled oats, farro, quinoa - even though it’s a seed), flax and chia seeds.

🥗Hit my protein goals. Again, an essential nutrient. I have composition goals, and for my muscles to recover from my hard workouts I have to make sure I’m getting in enough protein. For me this means chicken, fish, and the occasional beef or pork.

It’s Friday, which means a myriad of things:

1️⃣Weekend vibes! Think soccer games, yard work, church, family time. Love it!
2️⃣The end of my meal prep. Not gonna lie, I won’t make this stew again...although the couscous was a fun addition!
3️⃣Sleeping in. HALLELUJAH.
4️⃣A chance to set up next week to be a great one!
