Next Sunday is going to be Nate’s first Father’s Day (well, first human Father’s Day – we totally have been celebrating for the past 5 years because of Bunker and Keira. Furbabies count!) and I am seriously so excited to celebrate and show him what a fantastic dad and husband he is. I remember growing up we used to always try to make my dad’s favorite dishes all day so that we could really feast and enjoy the day with him, and his favorite was his grandmother’s chicken and rice recipe.
It’s truly delicious and the best part is that it’s a one-pot wonder meal! You brown the chicken, cook the onion and add the rice all in the same dish and then bake it off to glorious perfection. That’s such a great idea to make the dad’s favorite meal. We always have a big party with the family because it’s a joint party for Father’s Day and my birthday, so we usually just do fried chicken. This looks great, though!!!
