First of all can we talk about how cheesy I am and I how excited I was that I could make an “HD” out of eggs in my egg carton? Yeesh – seriously. I hope you guys still want to be my friend. I took about a billion pictures of this!
Anyway, happy Easter to you guys. I could go on for a very long time about the meaning and the seriousness and the utter celebration of what today means – and maybe I will once it feels right – but today I just want to party it up with my family and show you guys a recipe that I have made countless times lately and adore. I love that it’s a skinnier take on a chile relleno, but that it totally stands on its own in the flavor department. It’s also incredibly simple and satisfying – perfect for when you just want to eat good food, fast!
This uses a lot of eggs, but make sure you don’t throw those shells away! Did you know that you can crush them up and put them around your plants to keep pests out? True story! You can also use the shells themselves (plus the carton) to start seeds and create an indoor greenhouse. My sweet friend Natalie can show you all right here!

In the midst of all the Easter recipes out there I hope you guys get excited about a simple, rustic, home-cooked meal that just takes a few minutes to prepare and can serve a crowd!
