Cheeseburger in Paradise

Would you believe it if I told you I had never heard “Cheeseburger in Paradise” by Jimmy Buffet until I was 22 years old? Considering my growing up in Texas and college years at Texas Tech it’s pretty weird that I never had!  At least I came to light at some point in my lifetime, right Nate? 🙂

Yesterday I had my first smoothie in a bowl (SIAB) ever!  I wasn’t sure my blender could handle it, but she was a trooper!  I topped it with some amazing cereal that we’ll be talking about soon 🙂

Lunch was the last of the leftover Spicy Chicken Sausage, Zucchini, and Eggplant bake:

HEAVEN.

My walk/jog went well today…super hot, but I really tried to focus on how my feet were hitting the ground as well as keeping my abs pulled in tight.  It was hard, but I finished the whole hour!  The hard workout left me craving a big JUICY hamburger though…

Fine, mine only had grilled onions, tomatoes, dijon, and ketchup.  Whatever…it’s all in the spirit of the song anyway 😉  A side of sweet potato fries:

My night was made!  You know, sometimes you just have to have a gosh darn hamburger…and last night was that night!  I was so happy with the way Nate seasoned the burgers and the sides were perfection.  Jimmy Buffet ain’t got nothin’ on my burger 🙂

MARRIAGE REF FRIDAY

Mmmmmmmk.  So here’s the deal. I do not get motion sickness.  Neither does Nate.  But I HAVE TO have air moving in the car at all times or else I feel like I will spontaneously combust…and yes, that applies to snowy cold winter days as well.

HOWEVER, my dear sweet husband will drive in the car on 90+ degree days with the windows rolled up and NO AIR MOVING.  How he does not spontaneously combust is beyond me.

So guys, what’s it going to be?  Air moving or no air moving?  Windows up, windows down? Just remember…I’m counting on y’all 😉

    Sometimes during lunch I have to go out to the car so that I can sit in the hot air with the windows rolled up, because I can’t take another moment in the air conditioning. I will open the windows in the house any chance I get… I prefer to stay warmer than 80 degrees!

    I am the biggest freak about having air moving ALL the time. I hate stillness and not having air does make me sick because I do get motion sickness. So windows rolled up with air. Yes, I might be a bit high maintenance at times. 🙂

    First of all, Jimmy Buffet has been my most seen concert…he is awesome! I’m from FL…need I say more?

    Second…those hamburgs look awesome!

    Third…I am a window up (mostly). I have to clarify….if I am done with work or coming out of a really cold, cold building, I will drive about 20min with all windows up in the 90degree heat just to thaw out. My husband doesn’t understand it either Heather, so you are not alone.

    But after a workout, I like to ride in the 90degree weather with the windows down to cool down. Other than that, I don’t like the AC running very much cuz it gets too cold, so in the morning on the way to work, I am windows up and no air moving.

    Hahaa your last paragraph made me laugh because I am the same way.. I have to have the A/C or heat blasting.. and if it’s too warm in the winter, I crack the windows too! Driving in dead air, 90* out.. no way no how could I ever do that!!!

    Love SIAB, it’s kind of like a frozen yogurt sort of breakfast. Except not really frozen. Unless you put too many ice cubes in. Iamnotguiltyofthat.

    I like windows up, but I too need air moving — AC or just a light fan works good too. I can’t have it blow right on my face though or my contacts get dry and feel like they are about to pop out of my eyes!

    I get terrible motion sickness as I get older and I have to have some air flow! Thankfully, my fiance is all about the A/C or windows down if the weather is right. 🙂

    I’m with Naturally Single Mom. I have to have the A/C on, but I hate when it blows right on me. My husband gets so annoyed on road trips, because I adjust the vents every two seconds!

    Air moving! It can either be the air conditioning or the windows down, but there has to be circulation. My husband is just like Nate. He will drive around for hours in the Texas summer with no air on. I DIE!

    Considering I leave in Louisiana, the king of heat and humidity, I’m all about the air conditioner being on or the windows being down. I’d suffocate if not!

    ok what is heinz 57?? i noticed at the grocery store awhile back but i’ve never used it/seen it before! and now i totally want a burger!

    i can handle no air moving for awhile in the car but hubby hatesss it. 🙂

    Those sweet potato fries look heavenly!

    If no air is making you physically ill, then you need to turn on the vents. Perhaps you can close his off or get him an old man sweater 🙂

    Sweet potato fries are one thing, crinkle?! I must find those immediately.

    I have frequented Margaritaville one too many times on spring break many years ago, lol.

    And just as you wouldn’t leave a small child or dog in the car with no windows down, neither should two humans have to suffer. Is he saving the air? Lol.

    Air moving for sure! Who likes stale, stagnant, and hot air while driving? Besides your husband, that is. 🙂 Lol.

    Also, I love that Jimmy Buffet song. It captures the spirit of summer BBQs perfectly!

    Air moving. I don’t care if the windows are up or down, but there must be airflow.

    That said, I don’t like it when the airflow “touches” me. I have all of my vents pointed upward, so I can’t actually FEEL the airflow, but I know it’s there.

    Now, must go get crinkle cutter, because I feel like sweet potato fries probably taste better than they already do when they are crinkle cut…they certainly look better that way.

    Windows up with air conditioning on. That’s how I like it. My husband could do windows down no matter how hot it is… I just say yeah there is a breeze but it’s a hot breeze! I have to have the air conditioning to actually keep me from sweating.

    Okay, that is seriously amazing– especially getting through college in Texas without hearing it!!! How does that happen?! My sister went to TCU, and I feel like every time I went to visit her, I heard that song no less than 20 times. 🙂

    well back when I was younger I’d say have the air on all the time….but recently even though dallas is ridiculously hot, I enjoy no air and just the windows rolled down…..idk, i think i’m just used to the crazy hot weather now since all I do is play outside in it.

    Biggest pet peeve EVER. I hate when air is not moving. I hate to be hot. Many times when I leave the house on the wknd, my husband will open all the windows and turn off the air, even when it’s 90 degrees. It drives me mad.

    Love that song! Puts me in a beachy mood.

    And certainly air moving. I don’t HAVE to have it at all times, but I much prefer it. If I get cold I just turn the temp up a bit.

For my @fasterwaytofatloss friends, here’s an AM For my @fasterwaytofatloss friends, here’s an AMAZING low-carb day dish: roasted cauliflower with smoked paprika and almonds! It’s so simple to make, incredibly flavorful, and pairs really well with truly any protein. Enjoy!

ROASTED CAULIFLOWER WITH SMOKED PAPRIKA AND ALMONDS
* 1 head cauliflower, cut into small florets
* 2 Tbsp olive oil
* 1 tsp salt
* 1 tsp smoked paprika
* 1/2 tsp garlic powder
* 1/2 tsp pepper
* 1/3 cup slivered raw almonds
1. Preheat oven to 375.
2. Spread the cauliflower florets onto a large baking sheet and drizzle with olive oil.
3. Sprinkle evenly with salt, pepper, paprika and garlic powder, then toss to evenly coat it all.
4. Roast at 375 for 25 minutes, tossing halfway through.
5. When there are 3 minutes left, open the oven and sprinkle the almonds on top.
6. Roast for another 3-4 minutes until the almonds are just lightly toasted, then remove and serve immediately.

I remember when I wasn’t sure it would sprout at all, and then one day the seed split and there it was! We also hit a point November-January where there was zero growth and I wondered again if it was a waste of time.

Now there are new leaves, new height, and (most importantly) stronger roots, all because of a little patience and care (it’s a metaphor y’all 😆). I find myself excited about the next season where it will be planted in dirt, which will offer new challenges - and growth- of its own. What a blessing to learn such deep lessons from a humble seed!

God, thank you for the little things that show us how much the little things matter. Amen.

Wanna know what DOES work though? This amazing new deodorant! The biggest question I get about cleaner products is always about which is the best natural deodorant. Friends, I’ve found some decent ones in the past, but this one takes the cake!

One of my physical health goals this year is to gain lean muscle and get stronger, which means that I need to be getting enough protein in on a daily basis. For me a great source of lean protein is chicken breasts, but if they don’t taste great I’m not having it! So, if this is you, I have a solution for you: BRINE YOUR CHICKEN BREASTS! 

Here’s my fail-proof brine recipe for perfectly flavorful chicken breasts. Cook ‘em however you want - just make sure you brine them first! The difference is enormously worth it!

Recipe is for about 4-6 chicken breasts:
•3 tablespoons kosher salt
•3 tablespoons honey
•2 cups lukewarm water
•2 cups cold water

In a large saucepan bring the first 3 ingredients to a simmer. Remove and stir until the salt is dissolved, then pour in the cold water. IT MUST BE COLD - otherwise the brine will start to cook the chicken breasts! When the mixture is lukewarm, add the chicken breasts, making sure they’re covered in the brine. Cover and refrigerate for 1-6 hours (I recommend 6 if you can). When they’re finished, remove from the brine, rinse, pat dry and cook as desired!

I love running, walking and hiking, but weather, childcare, and a certain global pandemic make consistently getting out to do those kinda difficult. I’ve always enjoyed my #homegym, but quality cardio equipment is expensive! 

So what’s a girl to do?

This past fall I randomly decided to look at steppers, and found this @sunnyhealthfitness one on @walmart for $50! I just wanted something that I could use for 20-30 minutes 4-ish days a week, and it’s been an amazing fit. Would I like a Peloton? Duh, of course. But this has worked so well with the budget and space we have!

What’s your biggest struggle in curating a home gym?

I was weird about it first, felt like my problems weren’t big or messy enough to warrant professional help. And when I did start seeing my counselor I was awkward (this shouldn’t be a surprise). But here we are 4 months later and I’m seeing some incredible life-giving movement. God is so good, and I’m so thankful for friends who normalized counseling and therapy for me!

Truthfully I’m still heavily processing the last 2 months, which were preceded by 10 other hard months. Life is brutal and beautiful and next-level hard and a joy, all swirled together. I won’t pretend that everything is OK; it’s not. I’m not.

This past weekend I had a moment of complete clarity and joy and the knowledge that I will be OK. And for that only-God moment I’m so thankful. For all of you who have been praying for our family, who have offered the sweetest words and condolences, who have truly been there, waiting and wading with me through the hard - thank you. God is still good. He is still on his throne. And I am so unwaveringly thankful for that!❤️

I have so many thoughts swirling around in my head these days, and half the time I don’t know which way is up. But I do know this: focusing on simplicity is the name of the game this year for me. It starts with the things I can control: my food intake, moving my body, my thoughts, my actions. The rest will stem from there!
