HELLO sweet friends! It’s been a few days, right? Sometimes I forget that Sunday nights are actually kind of work nights for me and that I probably shouldn’t slack off…but that’s the nice thing about my job and being my own boss. Plus my amazing parents are in town so we took Sunday off to just rest and relax and spend time together!
I have some really fun recipes and posts coming up, but I had to start with this lovely one I did for Riceland a few weeks ago. These little guys are basically risotto balls, and they are so addictive. This isn’t a low-carb recipe by any means, but it’s so worth sharing with others!
I love serving them alongside a little honey mustard dipping sauce, but if you can find a fruity habañero sauce they would be PERFECT with that too. Heck, make your own! But just make sure you get these little rice balls going first – and double the recipe!
