We’ll call this what it is: an I-woke-up-in-the-middle-of-the-night-and-freaked-out-that-I-didn’t-make-anything-for-the-blog-and-realized-that-this-sounded-good idea.
It’s a mouthful, I know. Believe me I know. What is it with the laziness lately for me? Heck if I knew I’d fix it…but I’m just going to blame it on the heat. The summer heat is killing my motivation, killing my brainpower, and killing our house one un-vacuumed carpet at a time.
Fall, are you on your way? I need some restoration and I need it STAT! P.S. Did y’all know this Friday is the first preseason football game? Don’t ask me how I know (Nate told me) and don’t ask me who’s playing (Nate didn’t tell me and I didn’t look it up…yet) but there you have it. Football. It’s coming…fall is coming…and I think that might mean a clean kitchen is too. Oh, and perfectly brushed dogs. A bed that’s made, clean towels, spotless bathrooms. Sigh. But until summer ends I make no guarantees!
CARAMELIZED PEANUT BUTTER BANANA QUESADILLAS
- 2 flour tortillas
- 3-4 Tbsp peanut butter (or less depending on your peanut butter needs)
- 1 ripe banana, peeled and cut into slices
- 1/2 cup mini marshmallows
- 2 Tbsp butter, softened
- 1 Tbsp brown sugar
Heat a nonstick pan over medium low heat. On one tortilla spread one tablespoon of butter. Turn it over and spread the peanut butter on the other side. Arrange the banana slices on the peanut butter so that when the quesadilla is cooked you’ll have a piece of banana in every bite. Spread the marshmallows evenly on top. In a small bowl combine the rest of the butter and the brown sugar. Spread evenly on the other tortilla and place on top of the marshmallows. Place the quesadilla with the normal butter side down first and cook for about 2-3 minutes or until you start to see some color on the tortilla. Carefully flip it over (so that the brown sugar-butter side is down) and turn up the heat to medium. Cook for another 2-3 minutes until you start to see some caramelization. Remove from heat by placing the caramelized side up on a cooling rack. Let it cool for a few minutes just so the marshmallows will stay together a little better. Slice and enjoy!
Sure, there’s no cheese but it’s no biggie…kinda like we have no clean clothes at this point. No biggie. Right?
