We’ll call this what it is: an I-woke-up-in-the-middle-of-the-night-and-freaked-out-that-I-didn’t-make-anything-for-the-blog-and-realized-that-this-sounded-good idea.
It’s a mouthful, I know. Believe me I know. What is it with the laziness lately for me? Heck if I knew I’d fix it…but I’m just going to blame it on the heat. The summer heat is killing my motivation, killing my brainpower, and killing our house one un-vacuumed carpet at a time.
Fall, are you on your way? I need some restoration and I need it STAT! P.S. Did y’all know this Friday is the first preseason football game? Don’t ask me how I know (Nate told me) and don’t ask me who’s playing (Nate didn’t tell me and I didn’t look it up…yet) but there you have it. Football. It’s coming…fall is coming…and I think that might mean a clean kitchen is too. Oh, and perfectly brushed dogs. A bed that’s made, clean towels, spotless bathrooms. Sigh. But until summer ends I make no guarantees!
CARAMELIZED PEANUT BUTTER BANANA QUESADILLAS
- 2 flour tortillas
- 3-4 Tbsp peanut butter (or less depending on your peanut butter needs)
- 1 ripe banana, peeled and cut into slices
- 1/2 cup mini marshmallows
- 2 Tbsp butter, softened
- 1 Tbsp brown sugar
Heat a nonstick pan over medium low heat. On one tortilla spread one tablespoon of butter. Turn it over and spread the peanut butter on the other side. Arrange the banana slices on the peanut butter so that when the quesadilla is cooked you’ll have a piece of banana in every bite. Spread the marshmallows evenly on top. In a small bowl combine the rest of the butter and the brown sugar. Spread evenly on the other tortilla and place on top of the marshmallows. Place the quesadilla with the normal butter side down first and cook for about 2-3 minutes or until you start to see some color on the tortilla. Carefully flip it over (so that the brown sugar-butter side is down) and turn up the heat to medium. Cook for another 2-3 minutes until you start to see some caramelization. Remove from heat by placing the caramelized side up on a cooling rack. Let it cool for a few minutes just so the marshmallows will stay together a little better. Slice and enjoy!
Sure, there’s no cheese but it’s no biggie…kinda like we have no clean clothes at this point. No biggie. Right?

My mother used to make fried banana pies that were so good. She used pie crust instead of the tortilla, no peanut butter, marshmallows, and just plain old sugar and butter. It was sooo good. I might try these without the marshmallows. Sounds very nostalgic.

Brain-melting heat or not – I MUST try your quesadilla 🙂
Do you mind if I add a bit of chocolate, too?

Ok, I need to get bananas for this and another recipe, because this looks too good! I have some corn tortillas…maybe it’s time for experimentation?

Ha, I do something like this too, with a few chocolate chips and peanut butter. I sometimes joke that if it becomes public, I’ll be denied entry at the border if I ever try to visit Mexico. It’s an outrage to the poor tortilla. But…so…tasty!!!

I so hear you on the heat! I can’t stand summer anymore and can’t wait for fall to arrive! It does feel good knowing football starts in justa couple days though. I always think of fall and cool crisp weather when I think of football!
Kayla @ Sprouty Buns says
this brings back memories. I would make myself a peanut butter and honey quesadilla (sometimes I would add chocolate chips) everyday after school growing up. SO YUM!

Football is the best thing about Fall! 🙂 My girl and I used to pick one or two games a season to travel to and a few years ago when her job moved her across the country, that stopped. But, earlier this year she moved back and we just planned our first travel game in years. So excited!
